I canned up the last of my apples yesterday.

8 pints of caramel apple jam which is actually like a jelly I guess now– I was using Pomona pectin, misread directions and ended up with chunks of pectin……aaarrggh… but it worked out!  I put it in the blender to blend all of the pectin up, brought it back to a boil and jarred up.  It just doesn't have the pulp consistency, it's nice and smooth now, but just as delicious as the original!!!

4 pints of plain applesauce, 6 pints of spiced applesauce.

And to use up every bit, I boiled the peels and cores to make caramel apple syrup!  I boiled equal amounts peels/cores to water, strained, added in some brown sugar and cinnamon/nutmeg to taste.  Also added some clearjel in at the end for a thicker syrup.  I'm going to use this instead of my caramel apple jam that I've been using for pancakes and icecream! Wink  I ended up with 7 pints of syrup just by using the peel/cores!  Frugal, frugal, frugal!

Mom had some northern beans given to her……5#……so I canned bean soup yesterday!  Easy, easy, easy!  Now I have 6 quarts and 10 pints of bean soup!  I boiled a smoked ham hock and used that broth for filling up the jars and added the hock into the beans before canning.  Mom's been paying $3.29 for a jar (24 oz) of bean soup…..I about flipped when she told me that!!!  Free beans, and a few hours spent in the kitchen = about $48 worth of store bought bean soup!!!

I did my first ever canning project over the weekend…Long boil raspberry jam; just raspberries that I got on sale at King Soopers 6 months ago & froze, and sugar.  It turned out AWESOME.  And I put it on Grandmother Bread, with homemade butter.  *drools*  Perfecto!

Wearing cowboy boots does not make one an agriculturist….Having at least 3 varieties of poop on them does.

It IS better….Mostly because I know EXACTLY what's in it, and EXACTLY whats been done to it.  :)  I like being self sufficient.  The bad part of getting started on something like that is that my husband is going to get addicted, then I'll be in trouble if I don't do it more often.  LOL  :)

Last weekend I tried making peach marmalade, used frozen peaches and too much spice.  Tastes good, but the orange slices didn't seem to cook enough.  I will try again, maybe cook the orange slices before adding the peaches and cut back on the cinnamon.  I want to try orange and lemon, maybe this weekend.

Jeannie, have you tried this again yet?  What I do with the peels when I'm making any kind of marmalade (whether the recipe says to or not) is bring the peels and pulp to a boil, simmer 5 minutes, then let the pot sit, covered, overnight.  It really softens up the peels.  Then the peels come out of the marmalade like little pieces of candy. Eating

I canned the lemon-lime marmalade today and it made more than I was expecting–and I ran out of new lids!  I always have old lids sitting around, so I went ahead on the last 2 jars and re-used lids.  I'm going to treat those two jars (which were marked, so I know which two they are) as if they are unsealed and put them in the fridge after they cool (just took it all out of the canner a little bit ago).  I figured it wouldn't hurt to at least try and can them even if I can't treat them as canned and put them in the pantry–I can't be SURE they're sealed right with re-used lids.  I just thought maybe, on the off-chance they did seal, they would last longer in the fridge that way since there's two jars and I can't use it up that fast.

 

Though, I'm going to think up some kind of recipe soon to use the lemon-lime marmalade for, I think.  It's so sweet-TART that it really needs to go into a recipe rather than use it straight.

Pink RabbitI made,  for the first time, Strawberry Freezer Jam! I cant believe how easy it was. I  just stood there staring at my creation, admiring the beautiful color and dreaming of the yummy taste of it on Gma bread! Go try it, you wont be disappointed. It was soooo easy!Ladybug

I used to make strawberry freezer jelly all the time Angela. It is good. I'd take the kids to the strawberry patch with me to get the berries. There was this old gentleman there,when he saw us coming he'd say,"Aww here come the strawberry mashers!" lol Mashing strawberries was really the least of it cuz they'd pick one eat one too. lol

Life is too important to be taken too seriously.

I kinda cheated, I  bought a bunch of Strawberries at the grocery store, they were on sale! No strawberries in MI for quite some time…but its coming !   However, I still did the same thing as you all….clean one, then eat it, clean one for the pot, then eat one….

What a wonderful Strawberry memory! You'll never look at a jam / jelly jar the same way huh?

I got a great deal yesterday on flats of strawberry's and got to work last night!  I made Suzanne's strawberry lemon marmalade, and strawberry rhubarb jam, I loved the strawberry lemon marmalade the best!!!  Thank you Suzanne for a great recipe!Shroom

Last summer I had two lugs of peach's to can, and that was a job!! I canned some and made spiced peach butter out of some.  Our plum tree has very tiny plums on it, I did not want them to go to waste, so I decided to pick as many as I could and THAT was a job making jam out of plums that were just a little bigger then cherry's, pitting them all, I was not about to peel  them, just cooked them down and added sugar, lemon juice, and they made a great plum jam.  This year I might just have to let the birds have them all!!  Canning reminds me of my Mama, we would make jam together every year, so now when I can I do it thinking of her and all the wonderful things she taught me.  Canning is good for the soulSun, it makes you feel so good to see all those beautiful jars full of color, and in the winter when its cold, there is nothing like opening a can of fresh peach's and making a crisp, I dream of summer.  OK I put the sun in the wrong place!Surprised

I just came in from picking 3 cups of wild violet blossoms to make "Violet Infusion Jelly".  They are steeping in boiling water for the next 24 hours and the water has turned the most beautiful blue.  This would make a great Easter egg dye!!  Anyway, I made this for the first time last Spring.  I found the recipe in The Farmer's Almanac Blue Ribbon Cookbook.  When you add the pectin, it turns a beautiful purplish pink and it really does taste good.  My kids think I'm weird, but it makes a wonderfully different gift with a loaf of fresh baked bread.  Anyone interested in the recipe, let me know and I'll post it.  It's very simple — just takes awhile to pick 3 cups of violet blossoms.  I'm going to pick some more tomorrow to make a 2nd batch!!!
