I have beans in jars (for pretty) and some jams sitting in my kitchen window on the shelf (it's a deep garden window).  Every once in a while when I post a photo that includes my kitchen window, someone will comment about it and tell me it's a bad idea.  What they can't see is that my "garden" window juts out into a covered back porch which backs up to a hillside.  There is NO sunlight back there so it's about the same as storing them in the pantry except that I get to enjoy seeing them.  It looks homey to have canned goods sitting out, and it makes me feel as if I'm very productive. Happy Feet

I have only used the dehydrator a couple of times, the things that I dried, did not last long enough to have any long term storage problems.   When Hubby worked at the bakery, he brought home a large tray of sliced mushrooms that the deli was going to throw away.  They dried very well, but was a little smelly!   One trick that I learned, if you are going to freeze chopped peppers or onions, put them in an ice tray, then after freezing, put the cubes in one bag.  That way you can save space, and take out how much you need at a time.

I am taking tomorrow off from work to can because I have food that will go to waste if I don't and that is not acceptable LOL.

Had a bushel of cukes so a half gallon of refrigerator pickles went down last night. Tonight I sliced 2 gallons up for a double batch of Bread and Butter pickles. More to do something with tomorrow. Three gallons of tomatoes that I cooked down and will become juice then soup tomorrow. Kimchi – got 3 Napa cabbages for $1.50. May dehydrate some too. And have various veggie goodies that need cleared from the frig so thinking vegetable soup by Sunday to can up.

Was time to get crackin …..

I think canning days should be part of the bennie packages at work LOL

I have to get it wired that I can can soups, stews, etc.  (Can can? Is that a dance?) I'm always making 16 servings of everything, but it never even dawned on me that I could can that extra bean soup, or even my lamb korma! so I can just open the jar and dinner is on.  I'll have to keep reminding myself that ANYTHING (almost) can be pressure canned.

You're right – almost anything can be canned. Some exceptions would be things with milk or cream, pastas, grains. BUT these are quality issues not safety issues. Too much density prevents the jar contents from getting adequately heated all the way through, but a small amount of pasta or rice in broth doesn't become too dense at all.

Yeah, canning the rest of a big pot of good stuff is a really good way to stock up on the the best 'fast' food – your own cooking, ready to eat anytime! And some things that get better on each reheat are great candidates for canning. Here is an interesting site that has some mouthwatering recipes  – creative too.

Wow!!  What a great site!!  I've bookmarked it for future reference……so many things to can to make life easier without spending all that money in the stores for "fast food".  I loved the chili recipe and there's one for canning coleslaw (for all that cabbage I have growing this year!)

I was at goodwill yesterday and ran in to 12 jars in an old box marked canning jars.  I think the original price was 2.97 – marked with a marker though.  the jars were pints and I dont need any.  they were unusual too – never saw them before.  they looked like mayo jars, clear but with the word mason at the top on one side and they were sort of square like but round on the bottom.  anyone know about these?  there was no goodwill price on them and no rings.

DeDe — do recipes with potatoes can well?  I make a sausage/potato soup I might like to try canning, but I don't want the potatoes to turn into mashed potatoes.  That soup calls for cream, but you add it at the very end after you've heated the soup through.

How about pea/lentil/bean soups?  I make them with a base of carrots/potatoes/celery for flavor.

Jane, canning jars come in many shapes and designs, I have a lot of old jars, that have many names on them, Atlas, Ball, Mason, and many more, some are even tinted light blue.  Some jars are square and some are tapered.  If the jars you found have Mason on them, check for any nicks, and they should be good for canning.  I always look for jars at thrift shops and yard sales and you can get very good buys on them.

If you like those you might want to join the canning group I co-own – hundreds and hundreds of recipes. I posted the coleslaw recipe in Just Recipes a couple of weeks ago and I think that's the one she posted on her site.

I do want to try her asian recipes clones for sure!

Potatoes can well, but watch what type you use for what result you want. Meaning the russets/bakers tend to come apart more than waxy/boiling potatoes. So if you are canning a potato soup base (onions, celery, potatoes, chicken broth for example) you might want russets. If you want the potatoes to retain their shape pretty well, waxier ones are better. So try your soup with a boiling potato. Recipe???? Hungry

I canned a bunch of small red potatoes whole and halved last Fall with the skins on – USDA frowns on leaving skins on saying that you can't get them clean enough. Pffft! LOL

They are great – someone shared that they learned long ago to soak the potatoes in a vinegar water first and you'd have less starch fall-out in the jars. It works!

As for bean soups – they just get better with each re-heat so they are great candidates for canning. You need to make sure that the soup is more thin than you want the end result to be – really soupy going in the jars.

As much as I would like to, I just haven't got the room for any more jars! I've got lime pickles, salsa,jams and jellies. It's time to move on to the deep freezer, nothing in there except peas and beans and maybe a bag of frozen ripe bananas and a few containers of frozen applesauce. Got any freezer pickle or freezer jam recipes? 

Sometimes,I live in my own little world, but it's okay because they know me here.

Just finished 6 jars of peach jam, moving on to tomato preserves.  Also, need to retrieve the bell peppers flash freezing and put them into little baggies for freezing…
