You just need to have a steady stream of steam flowing from the hole you will cover with the thingy. It doesn't have to be all that high, just enough to give you a steady strong steam flow.

Ok, good stuff. I'm excited about this. It will be nice to have something good to eat for dinner when I have evening rehearsals and don't feel like cooking before I leave. I can just pull out a jar of sauce and cook the pasta!

Have fun with it, Chickypez! We who are new to this pressure canning process are all learning together.
On my electric stove, I started out on high just until the pressure started increasing, then cut the temp down some and kept cutting it back to maintain the proper psi. Mine is not a very good stove, and it is old, so not very effificent. You with better stoves may well not need to use high at all.

My stove is pretty vintage. It's original from when the house was built in 1979. Sometimes it's a little funky. It seems like it cooks hotter than other electric stoves that I've used, so I think to be safe I will start with the heat lower and raise it if I need to.

Ok, I nevergot around to doing my sauce last night because we had some supposedly severe thunderstorms headed our way. I figured that if I got it up to pressure, the storm would be sure to knock out the power and mess it all up. So I have it in the canner right now. The weight dealy just started to rock and it is so funny! Haha It sounds like a train! Please tell me it is doing what it's supposed to be doing.

The jars are out! We just got them out about to minutes ago, and the sauce was still bubbling inside the jars. Now we're waiting for them to start popping. I think that's our favorite part!

So much fun! I'm ready to do chili and chicken soup now! Haha But I need to do the peach jam first. The peaches were cheap at the store the other day, so I got a bunch of them. Then I'll do more salsa and corn relish. Hahaha When Christmas comes around, I'm just going to be pulling stuff out of the pantry and putting it in baskets!

Won't it be so much fun shopping from our own "stores"?
I am so glad I found this site………..I know for a fact, I would not own a canner or be excited about learning this canning craft! I just wanted a recipe for homemade bread!

Oh blast it all…you've all given me the bug now…I'm going to have to put up some stuff when I get back from the trip…and I may be bringing (or may get shot for trying) some canning jars back from WV with me this fall…in the meantime, I think I'll pick up some half pints.

I know what I'm gonna do with the hot peppers! I'm gonna break in my new dehydrator that my cousin gave me for Christmas. Then I'm thinking I'll crush the dried peppers to use for seasoning. I've got some tomatoes I want to dry after that.
I think we talked about this before but I can't remember the answer. How do you best store dried stuff???

Have had good luck with both glass jars and plastic bags, depending on the size and shape of what is dried. For the ground peppers, that what all those old spice jars are for!

I store mine in jars, both glass and plastic (mayo, etc.) and that works great. Started out using small jars but had to move up when I had enough to almost fill a quart jar with some things.
I have napa cabbage ready to be pulled out of the Excalibur this morning. My favorites so far are sliced green onions, cabbage, and spinach. I have lots of diced peppers dried also and they are great to have on hand.
What about a batch of hot pepper butter??? SO good!
