It's Sunday……..I'm making some homemade cinnamon rolls for breakfast today!

We're healthy all week long, I think we need something yummy!  Grandmother Bread is on the 1st rise……then all the gooey goodness can begin! Hungry

I got up at 5am with the hunters and made a full breakfast of bacon, eggs, toast and hashbrowns.

I woke up around 3:00am for some crazy reason.

I fixed bacon, eggs, grits and hoe cake.  Tell me ya'll know what hoe cake is!  Mama fixed it when she didn't want to make bisquits.  Made the same way bisquits are made but fried in a cast iron skillet lightly greased with bacon fat.  Sort of like a big pancake but no eggs in it.  Just flour, salt, baking powder and some bacon grease.  Omit salt and baking powder if you use self-rising flour.  I never have that anymore just all-purpose because of me making so much bread.

Oh and I love to have some blackberry jam to sop up with my hoe cake.

hoe cake, nope never heard of it!………sounds alot like what we call indian bread (well without bacon grease)………wonder how it got that name?

Back in the old days(or so Mama told me) cowboys fried their bread on the flat part of a hoe.

Makes sense to me because hoe cake is little flat fried pieces of bread.

I had a 1/2 cup of instant butter flavored grits LOL. Now for macaroni and tomatoes with a fat free corn muffin – SO is out for a few hours so daughter and I are having this for lunch – long time fav.

First I had a coffee and 2 slices of Christmascake (I baked that this week, froze it..and took one out yesterday, not beiing home for Christmas means we can do withouth..right?)

Than set the table and had toast and an egg….and more coffee.

Now reading it back..not a real healthy breakfast …

Just got back from the library and Target.

I just wanted to say that I love macaroni and tomatoes!  Hoe cake goes very good with it because I like my 'roni and tomatoes with lots of juice.

I learned how to do them when a friend in high school taught me her mother's 'recipes' for feeding 4 kids with no support from her ex. Mac and tomatoes, mac with milk and butter and S&P (my daughter's fav comfort food). Later my MIL from Kentucky always made macaroni and tomatoes when she made soup beans and cornbread – but she cooked the mac in the tomato juice (yuk).

I had oatmeal this morning with dried cranberry's thrown in.  I have to make myself eat oatmeal, it is not a favorite of mine.  Usually I put a few frozen blackberries in it to make it eatable.  My husband eats it every single morning during the work week…..I just can't do that!  I try to eat it at least 3 times a week with a piece of toast.  I do know it has lowered my cholestral by 40 points just eating it 3 times a week. 

Truly I wish I loved it….but I'd rather have a bowl of grits with a dab of butter in it with toast!!!!

Just grabbed some of the dried bread cubes I had made for Turkey Day…added a cup of milk, melted butter, four eggs, vanilla, slalt, pepper…let it soak for an hour, sprinkled with brown sugar and popped it in at 350'….it's puffed and ready and he's hungry…let's eat!

We ate it all!  An 8x12 pan…with peaches. I promised to make it again. He said, "this is even better than regular French toast". The possibilities are endless. Just use whatever ya have on hand…

(I didn't mention the cinnamon…)

Berta, that sounds really good!

Did you put the peaches on the top?  Like fruit on a pieces of french toast? 

I might have to fix this for David and I.  I love anything like this especially with peaches!

Steel cut oats which are SO much better than regular rolled Oatmeal.  If you want the bennies of oatmeal but aren't that fond of it, try these!   MUCH better.  I find the taste and texture of rolled oats sort of … yucky.

They sell them in regular grocery stores in the hot cereal area, most common brand is McCann's in and it's pretty expensive, but if you buy it in bulk at a store that sells things that way, MUCH more affordable!  (there is also a 'quick' variaty but it's not NEARLY as good!)

Directions say to combine in a proportion of 4 parts liquid to 1 part oats and to bring to boil then simmer for 30 minutes.  Well, if you're like me, who has time to fuss for 30 minutes in the morning!??!?! 

Here's the BEST way!  Bring the water to a boil the night before and sprinkle and stir the oats in, simmer just another minute or so, then cover with a tight lid and set to the back of the stove.  The next morning, turn the heat back on and heat it up adding a little more liquid if need be, or heat it up in the microwave. It's ready to eat!

It's important to heat it up again well, because of it sitting overnight.  Hasn't killed me yet in 20 years, but do bring it back up to temp.

 Yes, just piled peaches on top. Yogurt, too. This is basically "Baked French Bread". Suzanne has a recipe for a similar dish. You can do a lot with bread and eggs as I'm sure everyone here knows. Put fruit on the bottom, the top,…combine  with sausage, meat, veggies. cheese, etc. I just felt especiallly clever grabbing those dried stuffing cubes. I always have dried bread on hand cause I make my own and chop up what we don't use  in a couple days, but just never used them this way before. Thanks for your interest!
