It is spring, My Nancy still has a sore tongue from her surgery so I have been making easy to eat, flavorful soups for her. This is her favorite:

Cut into small dice a leftover roasted chicken thigh.

Saute a cup of chopped asparagus, two tablespoons of minced onion, two tablespoons of minced celery, one tablespoon of minced bell pepper, the chicken thigh and a tablespoon of chicken fat. Add 4 tablespoons of flour stirred to blend and 3 1/2 cups of milk, salt and pepper to taste.

Cook until very hot and well thickened. Check the seasonings. Serve with toast points.

I boiled a chicken Monday night along side the dinner I was making (tacos). So last night we had chicken salad sandwiches, potato chips and home made pickles. Tonight we'll have chicken noodle veggie soup or chicken lettuce wraps, and I'll save the soup for my lunches! We will be chickened out by Friday for sure!

Last night we had new potatoes and Vidalia onions, fried of course!  Nothing is better than a tater fresh from the ground!

That does sound good, Ross!  I've got a LOT of asparagus from my CSA (and more coming tomorrow), so I've got to figure out some new things to do with it.  I'm wishing Nancy a speedy recovery.

 

For dinner, I'm going to make some potstickers with the big bag of greens I got from the CSA last week.  We'll have that with some fried rice I made the other day with--you guessed it--CSA veg in it.  It's been an unusually warm spring here so we're already getting lots from the CSA and I'm trying to keep up!

Last night we had corned beef cooked in the crock pot, boiled new potatoes, and steamed fresh asparagus. Hot buttered cornbread was good enough for desert.  A plain and simple meal, but very saisfying.  We'll have the leftovers tonight.fork

It should be fine.  I do that a lot--I cook a couple of big main dishes on the weekend and we have them for lunches and dinners through the week.  I like to have lots of healthy leftovers around for my honey to take for lunch so he doesn't eat junk.

 

I would be careful not to overheat the quiche in the microwave, though, or it will get a bit rubbery.
