Thursday was my hubby's birthday. As usual, he got his cheese cake that I make every year for him. I also fixed grilled fish tacos with black bean and mango salsa, and grilled asparagus. The cake is always on his birthday menu, but the main dinner menu is different year to year. He chose well this year.   sun

I should be thinking about it.  I got 10# of chicken leg quarters at the store for $.39 a pound so I made a big batch of chicken broth and have chicken pieces.

 Tonight I am making fried green tomatoes, Hubby has been looking forward to fried green tomatoes as he was to the first of the red ripe tomatoes. When my step-dad was stationed in Alabama, I remember the ladies making fried green tomatoes, and even as I child I loved them.

 Tonight we are having Chinese food from one of our favorite places in the city, we used to go at least once week some times twice, but seldom go into the city anymore. Hubby has been not feeling so good here of late, so I decided pick up our favorite dinners as a nice surprise. Yum, no matter how hard I try, I can't make it taste authentic at home.

 My stepson is in West Virginia today, to make a "pepper run" those of you that know Oliverio's peppers know what I am talking about, he is stopping In Fairmont at the Country Club Bakery, so we will receive a bounty of goodies this evening, we will feast on pepperoni rolls, Italian bread and peppers, and of course some sweets--yummy.

Joell, I am glad that I am not the only one that has leftover Easter ham in my freezer.

 

Tonight's fare is crockpot poultry dressing and pork loin roast (done in a George Foreman roaster).  Haven't decided on a vegetable yet but probably either corn or green beans.

  I have been testing some crock pot food in preparation for Thanksgiving since I will be making the food here and transporting it to our son's house about 20 mins. away.

  Tonight we are having tacos. When I make the filling, I am a good size batch, we will have tacos tonight, and the rest of the filling will be frozen in portions about 1 1/2 cup each, these packets will be used for quick taco salad meals. Many times when I make taco salads, I bake large tortillas into bowls for the salad, but if I am in a hurry, I just cut up lettuce and top with the taco filling, grated cheese and some corn chip pieces. I save the corn chips that are in the bottom of the bag and the broken ones. I also like a southwestern ranch (lite) that I found the Kroger store, it is their own brand, nice an zippy, I use this on my taco and salads instead of sour cream to save a few calories, but, both together are very nice as well.

I'm thinking (really need to be doing as time is getting away from me) that we are going to be having fish for supper tonight (it is either talipia (sp) or catfish in the freezer) and not sure what else at the moment.

 Hi mamajhk--how do you prepare your fish? My hubby loves deep fried fish, I can't tolerate fish well, although I do like a nice fish tail sandwich about once a year. I would love to be able to do a nice pan fried fish for my Husband, I don't do any deep fried food but can do pan fried.

All i did to them was season with salt, pepper and Old Bay and then drizzled a little olive oil on them and into a hot cast iron skillet they went.  I sometimes use Suzanne's recipe for the deep fried onion rings.  I use it for a lot of things.   Sometimes I just season the fillets and dredge them in flour.

happy-flowerTonight we are having slow roasted chicken, creamed lima beans and cranberry sauce. The chicken is slow roasted and seasoned just like our holiday turkey. Smells so good and tastes even better.
