We are completely cheating today! It's soups and egg salad from my favorite farmer's market stall. We have both stuffed pepper soup and seven-bean soup. Either one is suitable, so I got both, since I really couldn't decide! And they make the best egg salad in the entire world! And soups, too!!
Thank you, Purple Onion!!! It might well have been peanut butter sandwiches had I been made responsible for cooking anything today…

gakaren: Still laughing! What we really wound up having was quesadillas. There's no place to go and get it or have it brought to you where I live, so if we're going to eat (and they insist), then something has to be slapped together. And lately, it ain't been that fancy…someone git me to the city, quick!

I took a package of Italian sausage out of the freezer, and a package of frozen Spaghetti sauce. I will break the sausages out of their casings and saute them up with more onions and garlic…and dump the sauce in…voila! Oh and….little bit of parmesan cheese too…yum! I love to freeze the extras when I make something. It sure makes life easier. I just had a wonderful White Turkey Chili from the freezer too, with cornbread….all made ahead and frozen. AND from the freezer, desert…homemade gingerbread…with a lil heavy whipping cream poured over the top. Good grief, no wonder I have love handles after this winter!!

Chili, made from my homemade and canned spaghetti sauce with some beans and chili seasonings added in. I also made some wonderfully sweet cornbread. Can't wait to dive in. Off to eat, now.

We had leftover grilled BBQ chicken, Chile cheese grits casserole, green beans and some of that Grandmother crockpot bread. It turned out a little undercooked so I put it in the oven for a few minutes. It is great but you gotta have teeth to chew that crust! Dessert? With all that who needs it?

Take out sandwiches down by the river on one of the first nice days of Spring. Bringing the puppy to let her run and chase the geese making their pit stop on the way back home to Canada.

From the freezer….baked ziti w/Italian saus, garlic bread & I'll slap together a lettuce/tom. salad.
Do you gals do that???…lettuce & tomato only, some seasonings (Mrs. Dash org.), maybe some REAL bacon bits & mayo! I think I like it best w/grape tomatoes.
It is easy & yummy!

I made a pot roast in the crockpot, mashed potatoes with sour cream & chives, gravy, marinated green beans, choc. chip cookies.

Glad to hear someone else makes lettuce and tomato salad. I like it with lettuce (iceberg of course), peeled and chopped tomatoes, a little chopped onion (or green onions), salt, pepper and mayo (Helman's or Dukes). That to me is a summer salad. HURRY UP tomatoes!!!

judydee, some time try it with iceberg & romaine! That seems to make it better for me! I throw in some onions sometimes too! But I prefer my old Miracle Whip!
I made a big bowl of this for our family reunions last year…sat it in an even bigger bowl of ice to "hold" it & didn't add the mayo until the line formed to eat! But it was a hit at both reunions…NONE left!

I'm schnitzel-ing pork chops, and making some white gravy, mashed potatoes, and veg TBD.
Comfort food is in order today for some reason. Pretty darned un-healthy, but since Pop has lived to be 92, I figure we can both afford to take a chance!

Had a piece of leftover pork roast that I cut into julianne strips along with some onion, carrots, celery and mushrooms and one very large clove of garlic. Sauted` those for a bit while I got some noodles started. Added a rounded tablesoonful of corn starch to a tablespoon each of soya sauce and black bean sauce and some black pepper and some ground dried chilies. Then added a pint of chicken stock and some broccolli. When it was all hot and the noodles we done we dined. :)
