My oh my!  Tonight it was a buffet thing, and dinner meeting.  Don't even want to share what all went onto my plate.  Shall we just say that there was only room for a small cookie for dessert…after the pot roast (with the potatoes and carrots, of course), black eyed peas, sweet potato, bean salad, pickled beets, corn muffin, yeast roll, then another dinner roll with BBQ pork stuffed in it, and baked beans!  Guess it will be things like yogurt and cereal for the next few days to make up for the past two!!   spinning-devil

Last night was leftover Ham cooked in the crockpot, mashed sweet potatoes, green beans with almonds and onions, Suzannes Grandmother bread in the crockpot and charleycooks Zucchini Cake with homemade Cream cheese frosting for dessert.  Guess we should be on yogurt for a while too!!

Where are we going and why are we in a handbasket?

Last night we had fried yellow squash, turnip greens, noonday onions, salad w/white radishes and cornbread … all fresh from the garden (well, except for the cornbread) … it was heavenly!

blessedhomemaker, BLT sure sounds good.  I can't wait for our garden fresh tomatoes!

 

Tonight, we are having homemade pizza.  The sausage, cheese, sauce, and peppers are homegrown.  Knowing that sure makes it all the more tasty.

Tonight we finished up the Easter ham. I cubed the leftovers and added it to mac/cheese, and had frozen peas, and canned peaches for dessert.

Remember, if it rains on your picnic it also rains on your garden!

I have been very neglectful about cooking for a while, living on leftovers. Last night I got a boneless chicken breast from the freezer and put it in the fridge. This PM I sliced it about 3/16 inch thick. It was still quite frozen so that I could slice it quite precisely. I seasoned it and floured it and fried it in olive oil. I served it with red sauce and pasta with a bowl of veggies on the side. I had enough to serve four people.

Unseasonably cool here in Central Texas.  A nice rain was enjoyed by the parched land, and we will celebrate with beef stew and cornbread.  Made some nice brownies too!!  YEE HAW!  Y'all come to supper!

Last night was chicken tacos with 'pickled' onions (orange and lemon juice, cumin, a little sugar for the pickling part).  Tomorrow night we are having a friend over to discuss horsey possibilities so we'll make "Butch's Bitchin' Chicken" in the dutch oven outside over coals.  It takes care of itself and won't heat up the house.  But tonight…..not a clue!  Oh brother…..

I put a beef roast in the crock pot this morning before I came to work,  will just open some of my canned veggies with it.  I need to go through my canned stuff, use more and give some away.  The new season will soon be here.

Ooooh – calzones!  Love, love LOVE them!  Excellent place for home made ricotta, indeed.

Altho, chops & 'taters sound pretty good, too!

Finally have that chili we've been talking about for days cooking away.  It's been so long, not at all sure it is seasoned properly, so all the powders and chiles are sitting out for later adjustment.  Not sure what will go with it.  Maybe cornbread.  Maybe tortillas.  But some around here just like oyster crackers with.  Yuck!  But we do have some of those.

Ross, do you use the pancakes like a tortilla or do you put the chili on top? I know a lot of people fix corn muffins with chili… my family likes Fritos. I prefer a glass of milk,peanut butter sandwich and sweet pickles…the family makes fun of me. Oh well!
