With all of these tomatoes does anyone fix goulash, ground meat, onions,peppers, celery and tomatoes with elbow macaronni?

Oh yes! I use the corkscrew pasta instead of elbows – one can get more of the sauce! Depending upon what the mood is I use either Mexican or Italian herbs. So good.

Ross- thats my husbands favorite version of goulash. Its pretty much how my mom used to make it too. We called it Hungarian Goulash until I was in high school and a girlfriends family, who were from Hungary, invited me for dinnerr. They heard Hungarian goulash was my favorite and wanted to make it fro me. It was meat next to noodles on a plate. Hmmm. But I also remember how gregarious and friendly her 'papa' was.

We eat that and it's a family favorite too. My mom always made it with packets of the sloppy joe mix from McCormick for seasoning, not adding extra onions and peppers etc. Now, I just toss in spices, and usually do my own peppers and onions because the packets of mix have too much salt, but I have some for emergency use too! (we never put in celery and I still don't)
We called it beef-a-roni, which is a copyright violation I'm sure so don't tell anyone! We also use the little spiral pastas because they hold more sauce as mamawolf says, but elbows are fine… actually, lately I've been using the bow-ties a lot because I like the Barilla "Plus" pasta because it's a little lower in carbs, and that's good for my father.
Someone said that things like that are all gimmicks, but I take every bit of moderate fat, low carb, high fiber, low sodium, lower sugar things I can find to use so that when he wants to indulge a bit on things that are important to him and he wants to indulge in something, I can have a little better feeling about it. It really bugs me that so many healthy things are so expensive! Food industry just wants to have us all willing to pay top $$ to eat additives and chemicals and fat, sugar and salt. I'm so glad he appreciates good veggies and my healthier cooking with extra herbs instead of salt and msg.
Oh my! I really got on my soap box didn't I? Sorry!

I take issue with how things are marketed too. Big time. I have never been more suspicious of the big food companies than I am now.( I think it started with the pet food recall a few years ago.)
It's nice to hear how well you care for your dad.

What's for dinner? Hubby is still in the field shucking corn, so I'll make either pork steaks on the Geo Foreman or speghetti. Haven't decided yet. Either way, we'll eat when he gets in out of the field which won't be until 8:30pm. But I'm not complaining: harvest is good this year.

Dinner is left over Thanksgiving Turkey soup :)
Carcass was slow cooked with the pan drippings and all the leftover meat.
Next night I pulled out all the bones and meats and separated them. Meat went back into the cooker with onions, mushrooms, celery, garlic, had of cabbage and potatoes. The broth is really rich and dark.
Great for the chilly weather we have had the last couple of days.

Today is John's birthday and he could have anything he wanted! He wanted a roast, potatoes and carrots. He's not into sweets at all so he didn't even want a cake or dessert. Too easy!

That does sound too easy Cin! No cake,haha! I'm hungry for creamy chicken and noodles. I like peas and dinner rolls along with that. Too bad I have to go to the grocery first . Arrgh

I put a soup bone in the crop pot this morning. After work I added rice, onion and peas to the seasoned meat and broth. Served with bread and butter.

Home canned bruschetta on French bread toast topped with whole milk mozzarella and basil, under the broiler for about 5 minutes. Nice light supper.
