mamawolf, your dessert sounds much better than green angel food cake. She decided against dying it when she realized it would be great for St. Patrick's Day but no one would want it by Monday. Then she was going to put a bit of green frosting and shamrock sprinkles on it but her Dad talked her out of that. He's a man of simple tastes, plain angel food cake and vanilla ice cream. This was a big deal though because this is only about the second thing she has ever baked.  And the first thing (chocolate chip cookies) she made with a friend and the friend did all the work.

What, by the way, is colconnon? That was why I originally started this post, not to talk about green angel food cake.  I have heard it mentioned or read it in a book or something but have no idea what it is.

Haha!  Colcannon is mashed taters with other stuff in them.  There are so many things that can go in, often some green onions, usually some kale or cabbage or other greens, sometimes some parsley if you use cabbage which isn't green enough.  It can be really good.  I like such things, but not everyone does.

Garden pesto crusted chicken breasts, peaches from the freezer, buttered Irish Soda bread and a spring mixed greens salad w/sunflower seeds, chia seeds,goat milk cheese, sliced red onion drizzled with homemade blackberry balsamic dressing. snuggle

Hi Lavenderblue.  Colcannon is mashed potatoes with sauted garlic and kale mixed in.  Too, too good.  I will post the recipe on FB for you.

 

Today will be Irish Lamb Stew, roasted cauliflower, Irish soda bread (traditional without raisins), Harp Lager and Irish Cream cookies. 

 

And yes, I am of Irish extraction if you  had questioned it!clover

The colcannon I grew up with … varieties abound! … was a combo of mashed potatoes, onions and pale cabbage.  With my only child loathing onions and cabbage I used to tender saute the diced onions and cabbage with a bit of the cooking water from the potatoes before mixing/hiding it all together with a bit of non-traditional sharp cheddar for baking.  Gotta do whatever possible to ply the veggies.  Come to think of it, I haven't done colcannon in too long and the idea of using kale is very appealing, thank you!

Tonight's dinner is a leftover combo: shredded pork baked into ww tortillas with a fusion of spicy marinara, mushrooms and mozerella.  Veggie is a big batch of beet greens from a great find at the farmer's market yesterday.  Later tonight the beets with rutabaga is going into borscht for tomorrow.

I am making Miso soup for myself with sliced carrots, dried seaweed, spinach, chopped red onion, brown rice, with the last of the Irish Soda Bread buttered. I am making grilled cheese with the Oatmeal Currant Raisin Bread for dh with raw milk cheese. Light supper this evening. Thinking of  smoothies made with frozen fruits in the freezer, blueberries, strawberries, banana with coconut milk base. snuggle

I may have to bite the bullet and roast the chicken today. Would have done it yesterday, but we were the hot spot in the nation at 87°. Looks nearly as hot today…

At least you can cook your chicken today.  I took mine out of the freezer last night and put in sink for a while and forgot about it until I saw it there this morning.  I was so mad at myself.  Just got back from the dump. Dinner maybe have hubby take me out now.

Too tired to cook much. Made a simple omelette with wilted baby spinach and a dab of sharp cheddar cheese. Some crusty french bread and a glass of red and I am feeling much better.

Doing a girls weekend with my best friend of 48 years. Made pesto crusted chicken breasts, brats on the grill, garlic seared garden beans, potato salad, canned kosher pickles, fall peaches, gluten free brownies and lots of wine!  snuggle

Probably tacos, just got the 2nd delivery of Bountiful Baskets in our area.  This week's offering included "Mexican" vegies, so I have beautiful cilantro, tomatillos, avocados, limes, and peppers!

Leftovers from last night…. round steak cut into cubes with potatoes, carrots, celery and onions all smothered in brown gravy and cooked in the crock pot all day. Yum!

Venison pie (ground venison, potatoes, carrots, mushrooms, onions and peas with a crescent roll crust), with steamed fresh asparagus.  Yellow cake with coffee buttercream frosting for desert.
