OfflineUmm… probably leftover chicken 'stoup' – too thick to be a soup, too thin for stew.
I made stock from two carcasses, strained, defatted, and unsalted. Sauteed veggies that I had in the fridge, added those and some thyme and a bay leaf; cooked some quinoa in chicken broth and added that. All in all, just needed a touch of salt and pepper – was ready to go. It made a big batch, so we'll be working on it for a little while. ![]()

OfflineI've got some leftover shredded beef that I made for burritos, so I think I'm going to try Georgia's lunch rolls recipe. I want to make it a bit healthier, so will make whole wheat Grandmother bread rolls and use the cholesterol-reducing margarine instead of butter. Cheese will be part-skim mozzarella that needs to be used up. We'll have a salad on the side. My honey is out on a 100k bike ride today and will need something substantial when he gets back. And I need those leftovers out of my fridge!

OfflineLast week I did a cottage pie to get rid of all my leftovers, it was great! Saute random veggies chopped up small (carrots, onion, celery, corn) in butter. I poured in some chicken stock with a little flour to thicken, already browned hamburger meat and poured it all in a pie dish and slathered leftover mashed potatoes on top and sprinkled with a bunch of mont jack shredded cheese. That got rid of a bunch of stuff! Tonight is beef vegetable soup so I can eat it for lunch all week, yum.![]()

OfflineI'm making Bacon and Avocado Sandwiches (http://www.epicurious.com/recipes/food/views/Bacon-and-Avocado-Sandwiches-109315), mostly because it's easy and I've had enough hassle the last couple of days to last me a while! Might make an easy veg soup to have on the side since I'm a bit salad-ed out.

OfflineI Love pasta! I love the many shapes and I love the texture. lately I have been buying boxes of different shapes that all have the same cooking times and mixing them all together and putting them back into the boxes. that way when I make a pasta salad it isn't just elbows. I guess it is the kid in me.

Offlineon one of the hottest days of the year….
vegan lentil and walnut "meat"loaf, with roasted garlic mashed potatoes, roasted beets, maple glazed carrots, sauteed broccoli with red peppers, green salad, sliced tomatoes, homemade sourdough artisan bread and a bing cherry flan for dessert
Lord only knows why my daughter and I decided to heat up the house with all the baking and roasting today, and even if all our company will have the appetite to eat in this heat (115*f outside, and I'm sure hotter inside)

I'm making blackened chicken sandwiches and probably a salad. I've been out of town and I have no idea what vegetables I have in the fridge . . . I'll pull out the limpest thing and that will be our side dish, I think.
