OfflineHi, Squeegees Mom! It's kind of you to ask--he did just fine! They started at 6:00 a.m. and he finished about midnight, his best 300k time ever, even though it was a tough, hilly route. This morning he signed up for a 400k ride on August 4th, also in the Portland area; if he finishes that one okay, he's going to do a 600k ride in the fall.
Is your hubby all ready for his big ride next weekend? Do you ever ride with him?
(Oh, and dinner tonight is going to be fried brown rice with Chinese BBQ pork and veg, plus greens with garlic and chilies on the side.)

OfflineSTH, Woo Hoo for your BF! That is amazing he can ride so far so quickly! I am duly impressed. (So is the Hubster) My honey is ready to ride this Sunday. Can't wait! Please set another place or two at the table. Your dinner sounds a lot more interesting than what I have planned. Grilled chicken, pineapple, jalepeno cornbread, and whatever veggie I grab first. I do have some Cinnamon Chocolate Bundt Cake I would bring for dessert. What time is dinner?

OfflineYeah, he seems to think it's no big deal to ride that far, but I think it's amazing, too! But I'm so sorry to hear about your disability--that must be so hard. Big hugs to you.
If your hubby decides to get into randonneuring, here's a good introduction to how it works: http://www.bicycletimesmag.com/content/beginners-guide-randonneuring. There's a link on the page to the RUSA website, where you can find your local club. I know some randonneurs who ride recumbents; they have a tougher time on hills, but are faster on the flat areas, so it balances out.
Anytime you're in eastern WA, be sure to let me know and I'll cook you up something nice for dinner. Not a thing wrong with grilled chicken, though, and that cake would certainly be welcome.
I think our dinner is going to be guacamole and chips--Murphala posted a recipe on her blog and now I have to have some.

OfflineI haven't looked that far ahead today. I have to can squash, potatoes, and the last of the peaches today. I have a ton of peppers that need to be picked and dehydrated. I also have chicken breast that needs to be cut and dehydrated for my puppies treats.
I have a lot of meats canned, so I'm sure I'll be opening jars for tonight's supper!
Canning does make it nice when you have a day like today- easy supper!

We're having Greek meatballs, veg, and tzatziki in pitas for dinner. CSA collards need to be used up, so those will probably be the side dish.
For those with lots of zucchini ripening and family members who aren't too crazy about it, I made this last night and we loved it: http://www.skinnytaste.com/2012/07/zucchini-tots.html. My boyfriend made a face when he found out we were having zucchini, but he LOVED these and asked to have the leftovers in his lunch today. (I didn't have a mini muffin pan, so I used a regular one and filled the cups up halfway with the mixture. Bake time was unchanged.)

OfflineWe really get into the Olympics, so we have a tradition of hosting a party every time there is an Opening Ceremony. The food served is from the host country. With it being London this year, I guess it is going to be Fish N Chips. Don't think we could do kidney pie. Not too thrilled this year, but boy did we love Athens! Go USA!

OfflineRuby, there are all kinds of great things you could make! Meat pies of all kinds are popular in the U.K. from pasties to Shepherd's Pie; I had a fantastic Chicken and Leek Pie in a London pub. Considering it's summertime and more traditional Brit foods tend to be heavy, you could do something more modern like Chicken Tikka Masala on the grill. And be sure to have some Pimm's or a gin and tonic with it--lovely drinks for summer.
Last night, I made shrimp with pesto and herb-marinated vegetables on the grill along with a fresh tomato tart with tomatoes from the CSA and my own plants. Looking forward to the leftovers for lunch. Tonight we're going to go out for dinner, probably Chinese food.

OfflineRuby, I just had to respond as well….what about roast beef and Yorkshire puddings? Treacle tart? Cornish pasties? Smoked mackerel? Dover sole? Cock-a-leekie? Welsh rarebit? Toad in the hole? Custards, blancmange, rice pudding or bread pudding? Mussels, oysters, sea bream, speckled trout?
Oh my, what a delight to have English food…I miss my grandparents who were fresh off the boat.

Tonight I'm making Indian food: Chicken Korma, brown rice, Vegetable Fritters (http://smittenkitchen.com/2006/11/throwing-pancakes-to-the-wind/), and Stir-Fried Cabbage with Fennel Seeds. If I can fit all that on my stove, that is.
