happy-flowerPracticing for winter fare--made a very large of vegetable soup and a loaf of bread.We will have the soup and bread for dinner, and the rest will go into the freezer for cooler days.

It's cool and wet here right now, so I added some beef stock and veggies to leftover spaghetti sauce and we had hamburger stew with crusty no knead bread.

Grilled chicken halves, green/yellow squash casserole,sliced tomatoes and cookies. Squash and tomatoes are from oour garden.

Got up early this morning and put a pork butt in the crock pot to make Suzanne's bbq recipe. Our neighbor's Son turns 13 today and we are having a party this evening, I am always asked to bring the bbq, it is so good. Will take a bowl of cole slaw as well.

Last night was pork chops and brussel sprouts in the oven, and zucchini fritters on the stove. Tonight, smoked sausages and asparagus on the grill, maybe with some buttered noodles on the side. The kids like buttered egg noodles with parmesan cheese.

Tilapia tonight and trying a new recipe for it 'cause I don't really have a good arsenal of fish recipes in my repertoire. We'll see. Serving with brown rice and….buttered carrots?

Mommajoseph, if you don't mind firing up the oven, this is an easy and tasty tilapia recipe that I use a lot!

 

Cook Time: 15 minutes

Total Time: 15 minutes

Ingredients:

  • 2 tablespoons butter
  • 2 cloves garlic, finely minced
  • dash pepper
  • dash salt
  • pinch dried dillweed or parsley(I use snipped fresh)
  • dash paprika
  • 4 tilapia fillets

Preparation:

In saucepan, combine butter, garlic, pepper, salt, dillweed, and paprika. Heat over low heat until butter is melted and starts simmering. Remove from heat. Brush a little of the butter mixture in the bottom of a shallow baking dish (line baking dish with foil, if desired) then place tilapia fillets on the buttered area. Brush top of each tilapia fillet with the seasoned butter mixture. Bake at 350° for 12 to 15 minutes, until tilapia flakes easily with a fork.
Serves 2.

I had made and canned some Carolina style BBQ, we'll have that with cole slaw and potato salad and corn on the cob.  I need to get busy and grind some wheat and get the rolls on!

Today is crazy hot again, 103, so I made dinner for lunch and we'll do sandwiches or cool yogurt later.  Leek 'n mushroom pie in a WW crust, with thyme, bacon and parmesan cheese.  Really creamy, ridiculously tasty, one of my favorites.

happy-flowerPutting dinner together using the crock pot, so good for these hot days. We are going to have sweet and sour chicken with either steamed or fried rice.

 I have really got into to using the crock pot again this summer, I takes a bit of planning but so worth the end results-- it is really to hot to cook a lot on the stove and we can only eat so many sandwiches. I am going to try using the cake and bread baking insert sometime this week.

I haven't seen recipes for crockpot dinner rolls sounds good. I'm having the spinach, onion, tomato pie that was submitted by Keelenorth. First time I've tried it.  Also grilled chicken.
