My Roma tomato bush is producing lovely little tomatoes right now, so I decided to use them on a pizza.  Crust was whole wheat, I used homemade pesto as the sauce, and topped it with some chicken, the tomatoes, mushrooms, and Walla Walla sweet onions, plus mozzarella.  We had it with some roasted Romanesco cauliflower.  Yummy dinner and will make a nice lunch tomorrow, too.

Hi STH. Can't wait to hear how your BF did on his ride! We have been thinking about him all weekend.

 

For dinner, we scored a good deal on some white sweet corn. We have been eating a lot of corn lately. Tonite is creamed corn with German Pork Chops served over egg noodles. Probably ice cream or frozen chocolate covered bananas for dessert.

Hi Squeegees Mom!  Thanks for asking--he had to give up about 200k into it, unfortunately.  The temp was about 95 (pretty unusual for that area) and the route was very hilly.  He did about 3000 feet of climbing (!!) and realized he'd only done about half of what he'd have to do and packed it in.  4 of the 9 riders didn't finish, so that made him feel better about it.  We drove home on Sunday, then he decided he hadn't had enough riding and did another 100k that evening!  Why yes, he is a little crazy, why do you ask?  ;)

 

Congratulations to your hubby on his ride--that's a LONG way to ride, especially in the heat, and he should be proud! 

 

Dinner tonight will be BBQ beef kabobs on a Greek salad--yum!  But why oh why do I only get the urge to BBQ when it's 103 degrees outside???

STH, I think both of our fellas are a bit crazy! And so are we for loving them!

Your pizza sounds great. Wish I could get my guy to like pesto. He will try it every now and then to see if he has changed his mind, but nope, he hasn't yet. Sigh.

 

Please tell your BF we are impressed with his riding stamina. Between the heat and the altitude adjustment, he did fabulous. He will nail it next try. wave

STH—-I noticed that you used Walla Walla onions on your pizza…do you live in Washington state, too.  I live in the Tacoma area and love our Walla Walla sweet onions!

My prince charming took a wrong turn, got lost, and is too stubborn to ask for directions.

Hi there, Princess!  Yep, we're in the Tri-Cities area (southeast of the state for non-Washingtonians, but not as far east as Spokane) and get our Walla Walla sweets from our CSA, Schreiber & Sons.  I've never been all that crazy about the WW onions, to be honest, but I'm learning new ways to use them and really liking them now; they were great in yesterday's Greek salad, for example.  We don't get up to your area as often as we would like, but I love it up there and have some wonderful friends in Renton and Bellevue.

 

Thanks for your kind words, Squeegees Mom, and I will sure let him know.  I think his next big ride is a 300k in Montana in September.  And this weekend we're going to get me a bike for my birthday!  I've got some back problems, but got the word from my PT that it would be good for me.  I'm not going to be riding any more than around the block for a while, but I'm anxious to get started.

 

Dinner tonight (just to TRY to stay more or less on topic here!) will be Eggplant Caponata on whole grain Italian bread with mozzarella; I may forget about side dishes and just make them big.  :)   Here's the recipe:  http://www.thekitchn.com/recipe-eggplant-caponata-sandw-57942

I plan to grill a split fryer on the grill tonight along with corn on the cob, and sliced tomatoes.

Corned beef brisket in the crock pot. Cabbage, potatoes, carrots and onions in the soup pot. I know I said I wasn't going to bake anymore til it got cooler, but I will be serving fudge pie for dessert. I just couldn't go any longer without baking a dessert. (I made it 9 whole days! Lol).

Pork spareribs with seasoned crumbs, baked in the oven, with baked potatoes. Our own cherry tomatoes in ranch dressing. My sister's 71st birthday cake for dessert!

Remember, if it rains on your picnic it's also raining on your garden!

Homemade tamales with a cucumber/tomato salad. The salsa is also homemade. Dessert will be fresh sliced peaches.

happy-flowerToday I am using only crock pots for cooking, dinner is ham and lima beans in one pot  and in the other crockpot i is bread pudding made from leftover cinnamon rolls. The house smellls so good, I am relaxing. I am getting to know my crockpots again.

Chicken tortilla soup made by using FBR chili gravy as a base. Added canned tomatoes, canned corn, leftover grilled chicken. yummy.

I (sorta) have a farm in Africa.

Last night we grilled about 5 pounds of marinated  chicken thighs for fajitas and had fajitas with all the trimmings and pinto beans, and Intense Chocolate ice cream for dessert. We sliced the fajita meat into 1/2 pound packages, and froze all but one. We will use it for fajita salad tonight. Not sure what dessert will be. Strawberry shortcake if I get unlazy and make some short cakes, or ice cream again if the heat keeps me lazy.
