I'm planning on baking some chicken breasts with a coating of breadcrumbs and Italian herbs. I'm going to try this recipe to have on the side: http://smittenkitchen.com/blog/2012/09/baked-orzo-with-eggplant-and-mozzarella/. That will help me use up some CSA veg (who knew there were long, skinny, pale green eggplants?) and give me a chance to cook with orzo, which I haven't used before.
I was inspired by your turkey dinner the other night, Joell, and took out a turkey breast to thaw. Now I hear we're supposed to get 90 degree weather this weekend! I guess I was ready for fall before it was ready for me.

We have enjoyed out turkey, I sliced and cubed turkey eatlier this week and froze packets marked for pot pies and hot sandwiches and possibily some to cook with noodles as well, the rest went in to slow cooker to make broth which was frozen as well, so many good meals from a nice turkey, enjoy yours as well. If you have a slow cooker or a small Nesco, that would be nice to us instead of using the oven, I always use the crock pot when doing a breast, they turn out so moist.
Tonight dinner will be taco salads.

OfflineBecause I work 3 nightshifts in a row, and my boys have left home, it's easy to get into bad eating habits, so I tend to cook a good meal and then make my own portion size ready meals (rabbit stew, 3 different curries, pasta sauce are in there at the moment). But when the weather is so changeable I don't always fancy a heavy supper before work so I've been grating and shredding mixtures like zucchini, carrot and leeks, butternut sqash and red onions in portion size and steaming them in the microwave for a quick healthy meal. For proper meals last week I only had seared lamb's liver with leeks, again on a bed of shredded steamed carrots because I was at a wedding on Saturday (heavenly buffet!) then out pike fishing yesterday. Rabbit stew tonight!

Hello STH, if you use your slow cooker, place in a bit of onion and celery under the breast it makes for a very flavorful broth.

OfflineIt's raining and a tad chilly here. I cooked a big pot of chicken veggie soup and now have a cast iron skillet of corn bread in the oven.
Life is good at the farm!

OfflineIt is 9:30 PM, and I just finished cleaning up the kitchen from supper. We had grilled ham and cheese sandwiches with dill pickles, tortilla chips and milk. I feel somewhat guilty for serving sandwiches for our normally biggest meal of the day…but we both are too tired to do much else. We have been driving or out in the heat all day. We drove into Houston TX to see the Space Shuttle Endeavor land at Ellington Field. It was piggybacked onto the 747. It is making its way to California for its final rest at the Science Museum. It was AWESOME to see. The lines of traffic were tremendous. It took over an hour to go less than one mile. But we managed. Then we drove to Galveston to tour the USS Fort Worth. A Littoral ship that will be commissioned this Saturday. We stood in line for two hours and then were told that there would not be enough time for us to do the tour.
But we were able to take a few pics of the outside of the shipl Then we walked on the beach for awhile and went home. That is why we are getting sandwiches at 9 PM. I will do better tomorrow.

OfflineWe are having "Rustic Mac and Cheese" that I found on Murphala's blog. I love that I can use the lactic cheese I made awhile back and put in the freezer. I had no idea what to do with it. I didn't like it well enough to eat it alone and I wasn't sure what to put it in. I added it in with some medium cheddar and it tastes very good. It's like mac 'n cheese for grown ups! I made it up last night and put it in the fridge. I'll be heating it up in the oven tonight.
I second MamaJoseph. What a wonderful way to spend the day!

OfflineTonight was crab cakes, mozzarella sticks, homemade salsa, home canned green beans and home canned pickled beets. It was delicious!

NEVER apologise for what you serve for supper. If you ever get any complaints just hand somebody the fork and the spatula and point them towards to stove. The odds are that you have been just as busy as anyone else.
That's how I handled it a couple of times…and now no one complains
…some nights I wish they would.

OfflineBreakfast for dinner…one of my favorites!
We're going out to a church bean supper tonight; 2 kinds of baked beans, brown bread, homemade coleslaw & pickles, lots of different homemade pies, all you can eat! Yum!
There are two churches in our town that have bean suppers on alternating Saturdays during the fall and winter. We try to hit one or the other as often as we can. They have takeout too. Those "little old church ladies" sure know how to cook!
