Making Roasted Corn and Tomato Soup again (I'm not a big soup fan, but I like this one) and Cook's Illustrated Rustic Italian Bread, which I'm going to top with roasted tomatoes, goat cheese, and Za'atar (method here:  http://www.maureenabood.com/2012/09/06/zaatar-roasted-tomato-crostini-with-labne-and-a-bluff-view/).  Greek yogurt or ricotta would probably be a better substitute for the Labne, but goat cheese is what I have.

We're doing a smorgasboard of left overs.  There is quite an array of bits of this and that in the refrigerator.  Not really compatible enough to throw together into soup, but filling and nutricious stuff!   wink

A little mac and cheese, some beans, some corn, half a stuffed pepper, a bit of smashed potatoes, and a couple of other things.  Hmmm.  That sounds like a pretty good soup!

Salisbury Steak with home grown mashed potatoes and home grown canned string beans.  I think I'll make an oatmeal cake for dessert!

It is a rainy day that just cries for homemade soup so I am making vegetable and meat soup thickened with left over potatoes and barley.  It is a good time to clean out the refrigerator and the freezer of leftovers and odds and ends. They all go in the soup. My last bag of chicken broth is going in the pot today as well. Guess I better buy some whole chickens and restock my stock. Got some dinner rolls rising, and home made butterscotch pudding for dessert.

When the weather turns a bit nippy, my first fall craving is always a root veggie roast – whatever is readily available drizzled with some EVOO and balsamic vinegar then slow roasted.  Picked up some jasmine rice yesterday and that should be good with it.  Also with a loaf of sourdough rye.  Yum!

The veggies this time around will be beets, onions, garlic, parsnips, little new potatoes, both orange and white sweet potatoes/yams, and the biggest carrots I've EVER seen (but was assured were very good).  Usually throw in some rutabega and turnips – maybe next time.

That sounds super yummy Pete!  I love roasted veggies!  All I have are potatoes (white and sweet) and carrots, …oh, and squash!  Sounds like a plan!!!  I guess that's what we're having along with some schnitzel style pork chops. Yeah yeah, not the healthiest way to make pork chops, but they're a favorite around here! 

Oh, and apple crisp for desert!

Supper (or dinner if that's what you call your evening meal) tonight consists of Baked Eggplant and a Lettuce and Tomato salad. The grocery store had eggplant on sale for 97 cents each and they were fairly large. I intended to make Eggplant Parmesan over spaghetti, but hubby said just the baked eggplant Parmesan was good for him..who am I to argue sun2

Wow!  Had to come add that this was a new (to us) rice and it is the BEST I've ever eaten!  It is actually called "Jazzmen Rice," with a pic of Louis Armstrong on the package, raised and packaged in LA.  Big Lots had the 28 oz pkg for $1!  And it is wonderful stuff.  (Am loving our little rice cooker more each time we use it!)

Will be going back to get more of the rice for sure.

And the veggies turned out great.  Cooked beyond looking at all appealing, but I like them that way - all carmelized and crunchy around the edges.  Between them and the rice, I am stuffed!

I have red beans and rice cooking on the stove for tonight's supper. The air turned chilly here in Louisiana so comfort food to the rescue!

We had some meat leftover from Saturday's roasted chicken, so we had chicken salad sandwiches on whole wheat Grandmother bread and a big green salad on the side.  I made a yogurt cake for dessert; didn't have time to get the glaze on it before it was cut into.  ;)   Recipe is here:  http://www.epicurious.com/recipes/food/views/Yogurt-Cake-with-Marmalade-Glaze-231588.
