OfflineHaving company this weekend and want to make a savory cheese spread to spread on bruschetta. I don't have the world available to me, but I do have some roasted red peppers, sun dried tomatoes, garlic and all kinds of herbs. What combinations have you tried that worked well? I hate when I mix up a things and they don't work well together.

OfflineFirst favorite is putting rosemary and just a hint of garlic (don’t overdo the garlic!) in some yogurt and straining it to make a cheese spread. Poor man’s cream cheese, though there’s nothing poor about the taste! If you have access to lots of milk to make your own yogurt with (which I know you do mamajoseph) this is great. My very favorite!
I’d definitely make some sun dried tomato and basil for one, then some sun dried tomato, with a little of the roasted peppers in there too. I’m not sure which would be better, sun dried tomato with a hint of pepper, or roasted pepper with a bit of sun dried tomato. I really like sun dried tomato better though so probably that one.
One family favorite to mix with cream cheese is chopped green olives! It never seemed fancy enough for company, but we did love to make a batch of it and spread it on crackers for a family feast. I’ve never tried this with yogurt cheese, but it’d probably be good too.
Beyond that I'd experiment with your favorite flavors!

OfflineI have an aerogarden, and grew fresh herbs in the kitchen all winter. Our favorite use for them was mixed into cream cheese and used a spread. Two combinations that I used a lot were basil and garlic chives with a bit of salt; also the fresh cilantro with diced hot pepper (from the greenhouse). We spread them on crackers, bruschetta, and even baked potatoes. I bet adding the sundried tomatoes or roasted red peppers would really "kick it up a notch"! Thanks for that idea!

OfflineMoooooo!!!! This is why I love this place. Why didn't I think of some of these?? Sun dried tomato and basil, will do! Cilantro and peppers, another natural combination…, then I'll do roasted garlic with…black pepper? And maybe just a roasted red pepper dip.

OfflineMamajoseph – that all sounds so yummy! I wish I had sun-dried tomatoes! We just had cream cheese with green olives for supper last night. Then a slice on cucumber on top! My favorite is cream cheese with green olives on soft, dark rye bread. I would love sun-dried tomatoes with basil, garlic & some cheese on bruschetta – yummm!

OfflineI did 1) garlic/herb with roasted garlic, chives and parsley; 2) sundried tomato/basil; 3) Three-pepper, green chiles, red bell pepper, black pepper, cilantro, cumin. They turned out well, but expect them to be better tomorrow.
These folks are coming a LOOOONG way to see us and work with us. 3 days of hard traveling to get here, so I want them to feel welcome when they arrive.
Also have some sweets made.

OfflineI don't can meat…yet. I don't have a pressure canner, but I plan to get one when we are next in the States. And I plan to make good use of all the information on CITR! I really can't wait to get started. It will make my life so much easier to be able to have some things like this in my pantry.
