Hi, I helped a friend today dispatch a thirty pound Turkey and she is going to have her husband cut it in half, so half will be mine to cook, now the question is I have never cooked half a turkey, it will be around 15 pounds, I am assuming that I will lay it down in a roasting pan and I was thinking that I could put onions, carrots, celery, and herbs under the bird? to roast, just wondering if anyone has roasted a half turkey?  surprised

I have done it many times. I like to remove all of the small rib bones. It makes slicing easier. I lay the half inside down on a bed of veggeis (carrots,onions, celery  herb leaves if I have them)  and I salt and pepper both sides. It doesn't take nearly as long to roast a half as it does a whole because the heat gets to both sides.

I used to fix half turkeys all the time. I would buy turkeys when they were on sale and have the guy at the meat counter to saw them in half. Just do it like a whole turkey…Ross is right…it doesn't take as long. I like to fix mine in one of those roasting bags with a cup or two of water.(I know,I know those bags probably have some unhealthy stuff in it that will cause any number of diseases). It makes for a very tender juicy bird.hungry

THANK YOU!!!  I was stressing over this a little bit!  I have cooked many turkeys in my day, just not turkeys that have been cut in half.  This was a BIG turkey for two people to handle, today was a little like a Lucy and Ethel episode!  We blew a breaker, jammed the plucking machine, I think you get the picture!

Actually those oven bags are made from the same polyester that your clothes are made from. So not to worry about those. before you get to the stage of ruining you food from the bag you will have ruined it in other ways. ;)

Sometimes I marinade the half in a two gallon zipper bag before I roast it.

There are many brines and marinades. many use soy sauce and orange juice and a variety of herbs, onions, garlic, do a google search for turkey marinades.

I have turkeys that are scheduled for the thankgiving pots in a couple of weeks and they still have the sniffles, I have waterproofed their coop and been medicating and immune boosting (with seperate water with garlic, vit C and carrots) but I have to stop med in order to butcher in time.

Would free ranging help and are turkeys smart enough to return to the coop at dusk?

Any advise would be greatly appreciated!

Turkeys forage real well.  We always let ours out everyday.  We did have a large area and a perimeter fence.  They will not put themselves in the coop.  If you start when they are young and give them some grain in the evening they will get the idea and want to come in near the coop.  If their wings are not clipped they will roost in trees.  They are not good about coming in out of the rain, we did put ours up when it was stormy.  Hope they get to feeling better.  We enjoyed raising them but found that chickens are so much smarter.

Thank you, I am assembling a run off their existing run today to they can get more fresh air and sunshine. They are not used to it and I don't want them to stress out further by being 'moved' so I will just open the door and let it be their idea to wander out into the tall grass. And thank you for the heads up about what to expect at dusk. We feed and water normally around an hour before dark so that will be when I russle them back into the coop. Keep your fingers crossed they are too sicky to fly away for me. I will be outside most of the day working so will babysit, but will be in and out of buildings and eyes off.. so fingers crossed! Thanks again :)
