I love canning, and I love being so comfortable with canning now that I can make my own recipes. Canning is like baking bread is like making cheese is like making soap. It’s all about practice. You get better with each attempt. I love food, and I love canning.

I canned 13 quarts of pickles this winter from pickling cucumbers that I found in the grocery store and my four kids ate them in less than 2 weeks!. I made my first batch of mozzarella cheese this past weekend and it was fabulous. I would like to be in the drawing for the BBB book. I am going to can this year! If my garden will cooperate. Its much harder to grow decent vegetables in Florida than I thought it would be! I’m used to mid-west bumper crops! I’d love to win the book!

I just finished using up concord grape juice that I froze from last year to make jelly – YUMMY – much better than store bought and I use a less sugar pectin too. Next up is frozen blackberries harvested Summer 2009. I like to make my jams and jellies this time of year because it is still cool outside. Then my kitchen is freed up for all the summer goodies!!

I’m just learning to can – water bath canning only to begin with. Pressure canning makes me a little nervous and I don’t have a pressure canner yet, which kinda makes it impossible to get started! So far pear preserves have been hubby’s favorite!

This will only be my second year canning, but I’m so excited! It’s exactly as you say…the more you practice, the more comfortable you feel. I’m hoping to can some meat this year as last year, I only did the basics (green beans, applesauce, apple butter, tomato juice & tomato sauce). Last summer was my first foray into canning. I made salsa with green zebra tomatoes, and my 9 year old has eaten every jar and is on pins and needles waiting for summer tomatoes.

But I want to lots more canning this year!
