We’re coming up on high canning season! I’ve been giving my new steam juicer a workout. I pressure-canned some beef broth yesterday. The vegetables will be hitting soon! (If my garden makes it!)

    Please,please BBB draw. The garden is thinking about production. Ha,there are 3 snow peas,2 tiny yellow peppers and all the tomato plants are blossoming.The carrots are being carrot-ish. The heat last week bolted the spinach. Sorta spinach, the squirrel :devil2: got to it first. I got about 4 leaves. I may in fact need the BBB this season, hope springs eternal.

    that picture took me right back to my days as a little girl watching my mother can and freeze all kinds of things! this is my first year trying to freeze tomatos. it seems such a waste to jus6t toss the skins on the compost pile. any ideas for them? if i get the BBB, i’ll try canning next!

    No, canned beef or chicken stock doesn’t have to be refrigerated–that’s why you can it! It has to be canned in a pressure canner, of course, NOT a hot water bath canner.

    yes, Suzanne, I know exactly what you mean by “high canning season”. July brought wild cherries, blackberries, tomatoes, and pickles when I had my farm. I sometimes thought I would lose my mind but at the same time reveled in it. My favorite ~ pickles. something about pickles just feathered my pillow. I loved staring at the jars of them lined up on my counter after all had popped. oh, what a wonderful world.

    Ordered my steamer/juicer this past saturday and can’t hardly wait for it to get here. There are whole plums and blueberries taking up way to much space in the freezer.
