I haven’t posted the Chocolate Ecstasies cookie recipe yet, but I’ll do that soon. It’s one of our favorites.
Christmas is so much about cookies for some reason. When I think back to the Christmases of my childhood, the COOKIES are one of the aspects that stand out. Oddly, I don’t bake the cookies my mother baked at Christmas. I wasn’t a big fan, as I got older, of the cookies she baked. Same ones every year, of course. I think I liked them when I was little–I must have. But they weren’t cookies I loved as an adult. (Ranger cookies, for instance. I am not a fan of Ranger cookies. They’re okay. Just not a favorite.) But the exact cookies don’t really matter. It was that she was in there every year baking up a storm of cookies. She also made some kind of weird pink candy that nobody really liked that much. And there was always the fruit cake. And nobody really liked that either….
But none of that mattered. And probably the exact cookies I bake don’t matter either. They’re all going to grow up and say, stupid peanut butter cookies, nobody liked them.
But she baked them for us.
I’ll take that.
