It’s hot. You need an ice cream sandwich.
Oops. They ate yours. You’d better make some!
Cut out some cookies. Any kind will do. These are my sugar cookies with candy sprinkles on top.
Bake ’em up. Let cool. Take out some ice cream. Any flavor will do. Let it soften up a bit then put a dollop on top of each cookie.
Spread it around with a knife.
Put another cookie on top.
Roll the sides in something–anything will do.
Chocolate chips or any kind of chips. Nuts. Sprinkles. Crushed peppermints. Candy corn.
You can wrap them individually and freeze them. If you think they’ll last that long. Be realistic.

Yummy. I might have to make some of these. They look like the great big cookie icecream sandwiches I ate as a kid. Loved those things. We are a family of 3 so a batch might last a day or two. lol.

Ha! I just made those cookie ice cream sandwhiches, and even EASIER. I just get a roll of Pillsbury chocolate chip cookie dough – the LARGE roll. I cut the slices thick, to they are large and bake them…when they are cool, I just do as you do, put some soft ice cream in them, press gently and freeze again…and then eat. I got the idea from seeing a girl eat a Nestle ice cream cookie sand. at the ballpark in Texas recently.
