Look how easy I’m going to make this. I would like this Summer Vegetable Pie, and maybe a little green salad with cherry tomatoes on the side. Veggies from the freezer would work just fine in this “pie” (which is not really a pie, there’s no crust, it’s just baked in a pie pan, that’s all), and it’s a very light dish. Vegetarian. Delicious. A little on the girly side, but then that’s what Mother’s Day is all about, right? If you want to man it up, you could always add some chicken or sliced kielbasa. (Reduce the veggies accordingly or it won’t fit in even a deep dish pie pan–or you could put it in a casserole dish.)
I think this would be great with my Ultimate Cheddar Bay Biscuits.
See? I’m not even asking for a yeast bread.
I’d like some Gingerbread with Nutty-Buttery Broiled Topping for dessert with some fresh-whipped Beulah Petunia cream.
By the way, I wouldn’t mind at all if I had some Strawberries & Cream Coffee Cake for breakfast.

I don’t think my chances of getting all this food cooked for me tomorrow are real high, but maybe you could show this menu to your kids and it’d work out better for you. I’m posting it a day ahead so you can start working on ’em. GOOD LUCK!!!!

My grandmother once made strawberry shortcake from scratch, strawberries from her garden, and while preparing it for me her neighbor called and asked her if she wanted some fresh milk (from their cow) and she made whipped cream and put that on top. It was the best dessert I ever had and I think of her and that dessert every time you mention Beulah Petunia’s milk and cream. 🙂

Yum! That pie looks good I might try that with bacon, mushrooms, broccoli, califlower, carrots, onion, bell peppers and zucchini.

Even though I have no human children, I have my Shih-tzu, Maggie, she is unaware that is is not a human person, she “fixed” me a very nice Mother’s Day breakfast, and with the help of her “Daddy Person” she surprised me with a lovely vase of roses.
