I’m laying by in store for CITR Retreat 2011 as boxes come in from sponsors. This box of goodies comes from the generous people at New England Cheesemaking, with all the supplies for mozzarella-making in our soft cheese classes. Additionally, they sent three copies of Ricki Carroll’s Home Cheese Making book as door prizes in the cheesemaking classes.

So wish I was coming. Actually, my husband wants to tackle the Cheat River on a raft one more time. He actually did it in his callow youth. So if you ever have another retreat, I could easily talk him into dropping me and possibly daughter off while he and our son head to white water country. The problem is and the reason we didn’t do it this year, besides finances, is it may involve him having a hip operation first so that he can get in and out of the raft. :no: (me, shaking my head over the “wisdom” of bucket lists)

Linda, I have milked the goats in the past, but haven’t been lately. I have a lot of cow milk! But I do plan to milk them again.

Hopefully I win that book!! I have a raw milk hookup for after the retreat so I can start trying hard cheese. I refuse to go through all that loving work using store bought milk.

I had never considered making my own cheese and am glad to know about New England Cheesemaking as I have no idea where I would get some of this “stuff” needed to make cheese locally.

Interesting they sent you liquid animal rennet when you can’t buy it from them right now. Or Hoegger’s or Caprine Supply, or the Dairy Connection. The demand is exceeding the supply evidently. I tried ordering it from Canada, we will see how that goes. If it doesn’t work I guess I will have to learn to use the vegetable rennet.
