That title makes it sound like I’ve been on an alcohol binge, doesn’t it? Heh.
But actually it refers to the two cheeses made by participants at this past weekend’s hard cheese workshop at the farm. They were guided through the creation of a Blue Gouda and a Beer Cheddar. Now the two cheeses are air drying before being waxed. The cheese waxed by attendees (which I’d prepared a few days in advance of the workshop so they could experience waxing) is the Jarlsberg pictured in the background.
