This is the time of year when summer squash and winter squash collide! I fried these slices of yellow squash and zucchini in a batter of flour, minced onions, garlic powder, salt, pepper, and crushed red peppers. OH SO GOOD.

Who cares about cholesterol??? Have you tried onion rings or mushrooms with the same batter? Just about anything can be deep fried as long as it is DRY–the slightest bit of moisture will destroy it. I learned that the hard way with corndogs.

Try baking the squash with some onion and green tomatoes sometime. Same mix, olive oil on a cookie sheet. Turns out great!

OMG< I LOVE things like this…I like to fry Zuccini in a mixture of flour/corn meal and seasoning…I just put a little oil in the large skillet and fry them – not turning often, or they get mushy…but they get really crunchy. YUM with Ranch dressing!
