Oregano Mozzarella


A couple of days ago, I made a pound of mozzarella. Last night, I was getting ready to grate it in my food processor for pizza and I decided to go outside and get some oregano. I put about a cup of oregano leaves right in the processor along with the mozzarella and grated it all together. (I used the large grater blade. I was afraid the herbs might gum up the fine blade.) The oregano leaves shredded right along with the cheese, leaving just a few stray whole leaves. This made a wonderful cheese topping for pizza!

I have a little bit of the cheese left over and I think it will be great tossed on top of pasta, garlic toast, baked potatoes, and all sorts of things. I think I will be doing this a lot this summer whenever I’m grating cheese!

    Looks good. Try basil and throw some of the cheese on tomatoes. Add a little oil and vinegar and you have a wonderful salad.

    I like to mix different herbs in w/my mozzarella too, but I use a different approach. Just before stretching it, toss in some finely chopped herbs +/or red pepper flakes. While stretching the cheese, you can work the herbs into it. This also makes a great slicing cheese for snacks/appetizers.
