Violets are popping up everywhere on the farm! If I have time this afternoon, will be picking some for violet jelly. You?

    Can you describe what the jellies taste like? I looked at the pictures of the infusions and they looked very pretty. Not a canner myself but it looks like you will get a beautiful result from both violet and dandelion jellies.

    Actually this weekend we picked a bunch and added them to our salad. It was sooo pretty. Romaine lettuce, spinach, bacon, different colored violets, mandarin oranges, craisins, toasted almonds. Served with a homemade citrus dressing. YUMMY

    Those little blossoms are a few weeks off here but I look forward to their short bursting forth. Although tedious to pick, I sugar them, let them dry thoroughly and use them as a pretty addition to lemon ice cream or sherbet. Add them at the very end of the ice cream machine’s cycle so that they stay little mauve specks. Not much flavor on their own but very elegant. They make a great garnish too.

    I was looking at the violets down by the orchard and amoung the purple ones, there was a bright yellow one. Nature is so beautiful.
    The wild flowers have really put on a show this year,

    Your farm is so beautiful. Loving the photos, but it makes me envious! We got another foot of snow yesterday. I love Colorado, but WV is looking better. I need spring!

    Who am I kidding we have not dandelions or violets here since we moved. I guess I’ll have to steal some so I can make jelly someday.I love the pretty violets anytime of year.

    Ohh, Violet Jelly. I’ll do an even trade of 1 organic Oregon Gooseberry Jelly for 1 Violet Jelly. 😀 We don’t have access to Violets in our area & I’d love to try it.
    We have a McMinnville just down the road. Just an FYI.

    So jealous! It’s still a bit early for violets here, though I randomly found a tiny patch of white ones in my backyard yesterday, where we’ve never had any violets before. I want to make linzer cookies with violet jelly now. YUM.
