Who’s tried corn cob jelly?

I love having an assortment of jams, jellies, butters, and other preserves in my pantry if for no other reason than that when company stops by or I go to visit someone, I always have a quick, handy jar of something homemade and delicious to offer up as a gift. I might not have time to bake someone a pie on a busy day, but I can always grab a goodie off the shelf. Which is nice, since it feeds my addiction for canning goodies!

    I tried canning for the 1st time this year and to be honest I don’t think it was very successful. I wish that like back in my Grandmothers era that when we canned we would have the help and experience of the women in our family to mentor and help us. I would love to win the BBB as I think that would help with my canning.

    :snuggle: I must try that. I wondered why I continue to can so much each year, when we don’t need it. I guess I am adicted, also.Do you ask for the jar to be returned? One would soon run out of jars unless you can your product in jars that you could spare. I only use that kind of jar for freezer jams and jellies.My regular jams and jellies, I put in standard jars.What do you do about the jars?

    I already have the BBB, (don’t need to be entered) but I made this last week (two batches) It’s delicious and has the color and consistency of honey. It tastes like a cross between honey and an apple jelly. Delicious!

    (BBB) My hubby actually does more canning and preserving than I do!!! Like you, he also enjoys sharing it whenever we have company. Today he’s taking several jars with him to donate to a silent auction at his city secretary’s meeting. Yes, my hubby IS a city secretary!!!

    I made a batch of the corn cob jelly to take to sell at the local farmer’s market. The first woman that looked was about 80 and told me that when she was young her grandmother used to make the corn cob jelly as a special treat for them around the holidays. She also told me that her grandmother made giant biscuits to go with it. So now I have a nice story to go along with the jelly!

    My grown boys are learning to can. I need an extra BBB to give to them..
    Their wives do not can! I have helped my boys to learn…since they used to break into the pickled okra, beans and pickles when they were kids. Devouring a whole jar while they were playing outside. (I’d find the empty jar later). Now they want their own home canned pickled anything and pepper jelly the hotter the better and love to show off their work when they have a company Bar-b-que…It’s a man thing…LOL

    I tried it Suzanne and it tastes wonderful! The only issue I have is only two of the five pints actually jelled…what on earth could I have done wrong??? Guess I NEED that BBB!

    I found the recipe for corn cob jelly a week or so ago. I don’t remember if it was on your site or someone elses. The corn is all gone here, so it will be next year before I can try it, but I will. I like making things that are unusual.

    I made Pea Hull jelly this year from Purple Hull pea hulls. The gang here at work really liked it.

    I tried the corn cob jelly twice. The first time I used Ruby Red sweet corn cobs, the water was dark gray, yuk! So then I tried using the cobs from yellow corn. I had 2 cups of “juice” from boiling the cobs, and I was too tired to try again. I had just cut and frozen corn from dozens and dozens of ears. Maybe next year! BBB

    I have made it 3 times now. once because I ran out giving it out to friends and a second time because I wanted to try some myself but ended up giving that away too as word of mouth spread about this unusual but tasty jelly. So I made a third batch and didn’t tell anyone! It’s hiding among my other jellies. so don’t tell anyone!

    BBB pleeeze pick me!!! I am a brand newbie to this site. I just love it! I emailed this link to other friends of mine, that love the country, old houses, canning and country cookin’, and great stories from around the world!

    I would love to win the BBB! It will be a great help to me. I want to help teach my young granddaughters about cooking and canning.
    Also, my husband is going to steam-boil corn on the cob at our fall & winter monthly bonfire & hayride parties, using his old Leffel steam engine boiler! We also have a big pitch-in dinner at the party. The Corn Cob Jelly will be fun to make with the cobs after the party, and at the next party we can have drawings for winners of the jelly!
    By the way, he is now in the process of building a steam-operated sawmill to run with his Leffel steam engine. That will be way cool too!
