I had a bunch of strawberries recently and thought of canning them whole but got discouraged by reports that they lose color and flavor that way, so ended up making more strawberry-lemon marmalade. If you haven’t tried this recipe yet, you must! It’s my favorite preserve, hands down, and everyone loves to get it for gifts. The lemon pieces in it taste like candy. Get the recipe here.

    Would love to win a Ball Blue Book. I remember years ago in my Grandmothers Victorian House, when they added an indoor bathroom and screened porch. The bathroom part was a huge room and one wall was a pantry for her canning, floor to ceiling. Loved to look in there and see what seemed like hundreds of bright colored jars of food.

    My mother always canned strawberries. She put them whole in the hot jars, added boiling water, put the lid on the canner and wrapped the whole thing in a comforter. She let them sit like that til she heard them pop and knew they were sealed. They were good!

    ohhhhhh….I hate to ask a stupid cooking question, but how do you best thinly slice the lemon peel and more importantly how do you chop pulp? Do you put it in a food processor?

    you know Suzanne, I’ve canned strawberries, after people telling me that they lose color and flavor and I was not unhappy with the outcome I got. They were still very red and yummy. I suggest that you try it at least once and see if you find it to be true. On the other hand, your strawberry lemon marmalade looks beautiful and delicious. :yes: :yes: :yes: BBB please!!!
