Winter time is not high canning season. There’s no garden coming in. No bursting farmers markets. No neighbors dumping zucchini on your porch. However! Winter is a fabulous time for canning those things you don’t have time to can in high canning season. A great time to make big batches of soups and chilis and put them away for busy days.
Here are a few of the winter-time canning recipes that can be found on Farm Bell Recipes:
Chili for a Crowd
Black Bean Soup
Hamburger Stroganoff
Corned Beef Hash
Bean and Bacon Soup
See all the Preserving recipes on Farm Bell Recipes.
And just in case you hadn’t noticed, I’m also giving away a pressure canner here today!
It’s a Ball Blue Book Project day! Today’s Ball Blue Book is sponsored by Gloria Elizabeth, in honor of her grandmother, Melissa, and daughter, Katherine.
For a chance to win: Leave a comment on this post and let me know you want it. You can just put (BBB) at the end of your comment or otherwise note that you want to be in the draw. One winner will be drawn by random comment number to receive a Ball Blue Book. Eligible entry cut-off is midnight Eastern (U.S.) time tonight (January 17). This post will be updated with the winner by 9 a.m. Eastern (U.S.) time tomorrow (January 18). Return to this post to claim your book if your name is drawn (or check the BBB Winners List).

Oooh, BBB!
I was watching Edwardian Farm on YouTube the other day and came across something that might be useful for Glory Bee, or at least future calves … This video: https://www.youtube.com/watch?v=SdfpVu3y5KU&feature=BF&list=PLEF072B4A10A84D2D&index=33 about 13 minutes in, they’re doing their first milking and you can see that the calf has a muzzle on. They don’t actually talk about it, but it makes sense that then it can stay with its mother overnight but can’t nurse, so the cow has a full udder in the morning. Then you just take the muzzle off and the calf can eat all day.

You have reminded me that I need to get my gallons of cherries out of the freezer and make some jelly. Two fully producing cherry trees is a bit much to deal with in the spring. Pick ’em, wash ’em and into the freezer for winter jelly making! Great way to warm up the house too!

I try to register again and it says I am already registered. I have showered. I am not offending. I love the goat baby. I cannot win if I cannot get into the recipe area. Grrrrr

I have been canning a lot of pinto beans in the last 2 weeks (35 quarts). Beans in ham stock and beans in a mixture for chili. I am looking for a recipe to can beens & weenies in pint jars. has anyone done this? I know for my quart jars I boil 6 cups of beans for 5 minutes – this usually gives me about 1 1/2 cups of beans per jar (7) when I load my canner and it’s the perfect amount. I’m wondering using this same method how much I would need for pints and still allow room for the hot dog bites to go in.
