Just stumbled upon your website and I am going to enjoy it immensely. I was searching for what we called “country celery” in Pennsylvania many years ago. You could buy it in the farmer’s markets during the winter and spring and I think it involved harvesting the celery late in its season and then burying it in trenches to be dug up later. I remember the celery being almost white but oooh, so crisp and tasty. Anyone know the process for this?
