Apple Butter Muffins

This is the time of year when everybody has apple butter. I’ve been experimenting with some apple butter muffins (which I’ll be serving at next Saturday’s workshop breakfast), and here are my results. I’m pretty sure these are the best apple butter muffins ever, but maybe you should test it to be sure! Let me know!

How to make Apple Butter Muffins:

2 cups all-purpose flour
1 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/2 teaspoon allspice
1/2 teaspoon cloves
1 cup apple butter
1/4 cup vegetable oil
1/3 cup milk
2 eggs
1/2 cup raisins, plumped*
1/2 cup diced apple
1/3 cup chopped nuts

*Place raisins in a small saucepan. Cover with water (or other liquid–can also use apple or orange juice, rum, etc.). Bring to a boil. Turn off heat; cover with lid. Let sit one hour and drain well before adding to recipe.

Preheat over to 400-degrees. In a large bowl, combine dry ingredients and mix well. Add apple butter, vegetable oil, milk, and eggs. Stir to combine. Fold in raisins, diced apple, and nuts. Spoon into a greased muffin pan or use liners. Bake at 400-degrees for approximately 15-18 minutes (keep an eye on ’em!). Makes about 15 regular-size muffins.

    I made this this afternoon. Delicious. Took them out of oven at 15 minutes.

    I made pear butter muffins just now. Used the Quick Mix muffin recipe but substituted 2 (heaping) Tbsp of Suzanne’s Pecan Pear Butter for the 2 Tbsp oil in the recipe. I have to say, YUM!!! The two of us ate all six of them for lunch!

    The look soooo yummy, but no making them for me. A spring freeze ruined the whole apple crop here in Michigan. 😥 😥 😥

    I needed to make some muffins for a church yard sale. I didn’t have any plain apple butter, but had the jar of Whiskey Raisin Apple Butter that I purchased at the party so that’s what I used. They were delicious and a hit. They’ve been requested for a coffee hour after church.
