People ask me for recipes all the time. I never forget, so if you’ve asked me to post a recipe and I haven’t yet, it’s because either I haven’t found the recipe you requested yet, or I haven’t perfected it yet. When I’m asked about an old-time recipe in particular, I do a lot of research before posting. Usually, I start with Georgia then sometimes she turns me on to her church lady friends. If that fails, I do more research on my own and start experimenting. I won’t post a recipe until it’s one I can stand behind.

Then there are recipes I just make up, like this Chicken ‘n’ Biscuits dinner, which I posted the other day on the Daily Farm Photo and then there’s an outcry for the recipe! I feel a little bad about posting it because I usually make a semi-production and post a series of photos demonstrating the entire procedure and I don’t have any series of pictures to go with this recipe (since I wasn’t planning to post it). But, so many people have commented or emailed me asking for this recipe, I must bow to your Chicken ‘n’ Biscuit desire!

Chicken ‘n’ Biscuits is a very typical southern-style dish that suits my old-fashioned cooking philosophy to a T. Chicken, veggies, rich sauce, and homemade biscuits. What’s not to love? (The biscuits are key here! Homemade! Don’t be puttin’ canned biscuits on there! You’ll be struck by lightning!) I’m sure there are “real” recipes for it all over the place, so you might check this one against your cookbooks and see what I left out, LOL. I make it like a chicken pot pie but with biscuits on top, and I use whatever I have onhand, so it varies a little whenever I make it.

I use my Homemade Quick Mix, and for this recipe, I made a triple recipe for 18 biscuits since I was using a 9 x 13 casserole pan. (My basic Quick Mix recipe doubles, triples, and so on, which is why I start with it at a 6-biscuit recipe so you can make however many fresh, hot, wonderful biscuits you need.)

Here is an example of just one of a number of requests I got for this recipe:

OMG!!!! I can now make biscuits!!!! These are so good & fast and EASY!!!! I am on my 3rd batch since last night!!! My “princess” requested to take them to school for lunch… PLEASE post the recipe for the chicken & biscuits – she wants to try that too… That picture was what tempted me to try one last time to make biscuits! Anytime I had tried to make them before they either came out like hockey pucks or were more work and mess than they were worth… THANK YOU THANK YOU THANK YOU!!!!!

Well, now, what can I do? That one finally broke me down, despite the lack of my usual series of photos to go with a recipe. So, without further ado, here it is!

How to make Chicken ‘n’ Biscuits:

3 chicken breasts (cooked)
garlic powder, salt, pepper
1 10-ounce package frozen peas
1/2 cup carrots, diced
1 small onion, diced
3 small potatoes, diced
2 cans cream of chicken soup
1 15-ounce can chicken broth
1 cup cheddar cheese
dried parsley
18 biscuits (unbaked)

(Note: Use whatever vegetables you have onhand! Celery would be great with this recipe, for example, as would any number of other veggies. This is an easy recipe to play around with to suit your personal taste and what’s available in your pantry or fresh from the garden.)

Cut up cooked chicken breasts. Grease a 9 x 13 casserole pan. Spread chicken over the bottom of the pan. Season to taste with garlic powder, salt, and pepper. Add peas, carrots, onions, and potatoes, spreading evenly over chicken. Spoon cream of chicken soup over chicken/vegetable mixture then pour broth over top. Sprinkle cheese, then parsley, over pan. Top with unbaked biscuits.

Bake, uncovered, at 450-degrees for 15 minutes. Decrease temperature to 350-degrees and cover pan. Bake for another 45 minutes.

This is as good as it looks.

    Yummmmm! That looks so good! I think I miss my Great Granny’s chicken and dumplings. I have not had a good bowl of that sense I was a child. I have tried it at many places, even gave it a whirl at home and no luck. Always tastes to much like flour/raw dough. The Chicken and biscuits my just fill my void for a while! Thanks!! :sun:

    I saw Chicken n’ Biscuits and I thought mean rooster had finally met his maker. I’m guessing this batch had store bought chicken though. Not the way my mother taught me to make it, but yours looks and sounds really good. I’ve always baked the biscuits separately. I’ll have to try your way. One less dish/pan to wash.

    I am lucky to have learned a lot of my grandmothers recipes from cooking with her. Someday I will have to tell you about our “incident” making zucchini bread… The memory of my grandfathers look and comment when he came in the kitchen still makes me laugh 25+yrs later….
    I also have my great-grandmothers recipe box, but alas the one recipe I hoped would be in there wasnt – her donuts. I remember going to her house around 3 or 4 yrs old, her cooking them and the whole house smelled like nutmeg…they were soooo good right out of the hot oil…..thanks again for posting the recipe! I’m itching to go home and make it right now….It’s going to be a long day at work….!!!! :snoopy:

    I find your site an absolute delight! I have been playing around with a recipe I had as a child in one of my father’s churches. A dear woman in our church would make a banana cake. As I remember it would have a yellow cake and then the icing was fresh mashed bananas, I have tried to make it that way but it was wrong. I would love to hear your ideas for such a cake.     I miss Fricasseed chicken. All I remember is that Nana would wash and cut up a chicken, put some flour on the chicken pieces, fry it in a little oil for “a while” and then add some water and cover the pan. Then she would let it simmer for “a while”. I don’t remember if she left the chicken wet, put any seasonings in the flour, how much water she added or how long either of the cooking times were.

    She was from outside Baltimore/Annapolis – a village called Riverview in A.A. county. I don’t know if it was a Maryland recipe or where she learned to make it. All I know is that it was GOOD. Made it’s own gravy from the flour/water and simmering.

    Thanks Suzanne for reminding me of this easy, fast and delicious meal-in-one! I make something similar and call it “Quickie Pot Pie.” I sometimes use up left-over roast beef, turkey or go meatless. I scrap the cheese to lower the calories and use all fresh vegetables (broccoli is a good ingredient). I make a low-fat, garlic sauce instead of using canned soup. I cut out my biscuits with a large square ravioli cutter and leave just a little room between them. By dressing it up a little, it’s an elegant meal for guests…

    That sure looks yummy, Suzanne and I have a wonderful recipe for biscuits that are like KFC’s. Called “Cloud biscuits” and so easy you cannot mess them up!!! YUM

    My request is for Chocolate sheet cake…just like my husband’s Grandma used to make. I have tried several recipes and they were very good…but not “just like Grandmas” says my husband. See what those church ladies can do for me…ok?

    Suzanne – This was so yummy. DH and I made it last night. I used your Quick Mix biscuits also. We did not have any chicken broth so we used a carton of Mushroom broth – worked out great. Thanks for sharing the recipe. Also, DH and I love G’ma’s bread!!! Your dough enhancer really really helps with the whole wheat flour. See how you’ve inspired me??

    Growing up my Grandmother made something she called Butter Tarts – similar to pecan pie but no nuts – there were some raisins but not many and perhaps none at all at times – they were made with a pie pastry type crust in muffin pans and they were magnificant – the edges would carmelize and be just shy of burnt and crunchy in spots – wonderful – sadly I didn’t start baking or really learning my way around a kitchen until after she was gone and her recipes with her…..would love to see what you might come up with on this Suzanne!! :yes:

    I have my grandmother’s cookbook that was published in 1939, and passed down to me. I cherish it so much, because there are many recipe’s in her handwriting on little scraps of paper tucked in between the pages. Nobody can cook like Grandma! (she passed away many years ago) This recipe made me think of her. Wish I could share her homemade chicken noodle soup, but I learned by watching, not measuring…lol

    i made this for dinner last night and it was absolutely delicious!

    i just substituted 2 c. of white sauce for the cans of chicken soup and swapped lightly sauted leeks for the onion, and then i topped it with your beer bread drop biscuits!
