Does that not look too delicious for words?! Bee posted this recipe in the forum and I had to try it. It was just as delicious as it looks–and soooo easy! Though I must say, the most spectacular part was how pretty it was. This is real company food. Company food that makes it look like you worked hard when you were really lounging on the couch eating bon-bons all day because this is a crock pot recipe!

(Don’t you love that word, spectacular? It’s an under-used word, and sadly so. So many of the simple things in life are spectacular! Go ahead, use the word spectacular today. It’s FUN!)

How to make Cranberry Pork Roast:

3-4 pound pork roast
salt and pepper to taste
1 cup ground, or finely chopped, fresh cranberries
1/4 cup honey
1 teaspoon grated orange peel
1/8 teaspoon ground cloves
1/8 teaspoon ground nutmeg

Note: I used a 2 pound pork sirloin roast since that was what I had in the freezer! I went right on with the recipe as is anyway, using the same quantities of the other ingredients.

Sprinkle roast with salt and pepper. Place in slow cooker. Combine remaining ingredients. Pour over roast. Cover. Cook on low 8-10 hours. (With my smaller roast, it was ready in about 5 hours.)

Okay, I admit that after I put it in the crock pot, I added even more honey, just drizzling some over the top. I was out of control. I love honey.

I was also too lazy to finely chop the cranberries.

I just sliced them. It turned out great. In fact, I think I could have been even lazier and not chopped them at all and it wouldn’t have mattered. Just, you know, in case you’re lazy like me.

A bit of sliced leftovers the next day made a spectacular sandwich!

    Although, I’m not sure I could get my guys to eat it. They’re a stick in the mud when it comes to trying something new.

    I’m SOOO lucky when it comes to non picky eaters. My youngest has taken to being picky, but the rest of them are not. Which is good, because they’d probably starve. The 10 year old is eating lots of PBandJ lately. If she doesn’t like what mommy cooks for dinner, then she has to figure out something else because mommy is not about to cook more than one meal for dinner!

    On another note, the alarm woke me from a SPECTACULAR dream! I was at the animal shelter and found a baby Nigerian Dwarf doe that needed a home. There were also several other goats there as well. I was in the middle of deciding whether or not to get the Nubian when the evil alarm went off!

    That roast looks simply wonderful. I’ve got one in the freezer and I’m going to try that for tonight. I’ve got some of those four-footed furry meat eaters that show lots of interest in things on the counter also.

    OK, as soon as I can tear myself away from your post I’m going to add pork roast to my shopping list. It’s been a while since I’ve done one!! And yes, I’m a crockpot lover – I use my oven to store my other pots and pans. Emma, my cat, tries to beat me to the kitchen any time I’m headed there. In fact, she ankle walks me to make sure we’re going to the same place. She would love to help prepare a roast…. :catmeow:

    I have the “twin” to your grey cat sniffing your roast. She just had a little grey kitten that looks just like her too a few weeks ago!So, now when I walk into my kitchen I have Ki-Ki, Jo-Jo,and the kitten running ahead of me HA! I need to come up with a name for the cute llittle critter.

    Looks yummy! I think it will have to wait until after Thanksgiving, but I’ll print it out for my hubby the cook. It sounds like one he’ll like. My cat doesn’t like people food so she usually doesn’t get on the table.

    Bee, I thought we were the only ones with “idiot” mailpersons..I have had boxes stuffed into our secure mailbox too, due to thier laziness and not wanting to travel down a SMALL street to deliver it. We have had to use screwdrivers too, to get things out…but good grief!!! A Southern Living Cookbook? My mother used to have those – they are STRONG books.

    I just got a crock pot and this recipe does sound really good. And talking about lazy – do you think I can just add some of those dried cranberries near the end of cooking?? I already have those and add them to my steamed green beans for a pretty dish.

    Y’all aren’t the only ones with an idiot mailperson. My hubs received his diploma in the mail a few years ago, the mailperson left it next to the mailbox, rather than bring it to the door, where it slid into the road and was almost run over. *sigh*

    I cannot wait to get my calendar! To console myself, I went and got your book at the grocery store today. I’m glad I did! It was the last one! The other book racks were full, but yours was definitely the popular one! They did an excellent job on the cover guy 😉 I am so thrilled to see your name so HUGE too! I think I will go get the other copy for my Mother in law. I don’t want to loan my copy out! Maybe I’ll get it signed by the author someday! 😀

    Oh and my husband and I were talking about you today when I got the book, and he asked if you were doing any other books. He loves your writing style and wonders why you don’t just take your blogs and put them into a book and sell it. Good idea!

It was so tender it just about melted in our mouths. Everyone loved it. There were 8 people present, it was a 6 pound roast, and only two slices left, so you can see how POPULAR it was!
