This is a bread I made up for Morgan because she loves hot cocoa so much. As soon as the first cold day hits, she is pulling out the hot cocoa and piling on the marshmallows. She is a hot cocoa lover, and has been since she was a little girl and it snowed one time for like five minutes in Texas. I ran and woke all the kids up so they could witness the event then gave them all hot cocoa. By the time they drank it, the snow had melted and it was 100 degrees again. (I’m exaggerating. But only slightly.)

But why must hot cocoa only be in a mug? She can have hot cocoa bread, too. And so can you!

How to make Hot Cocoa Bread:

1/2 cup cream cheese, softened
1/4 cup butter, softened
1 1/2 cups sugar
1 egg
1 teaspoon vanilla
1 1/4 cups cocoa powder
1 1/4 cups buttermilk
2 1/4 cups all-purpose flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup mini marshmallows

Combine cream cheese, butter, and sugar. Cream with a mixer. Add egg and vanilla. Mix again. Add the cocoa powder and about 1/2 cup of the buttermilk; mix well. Add all the remaining ingredients (except the marshmallows) and stir to combine. Stir in the marshmallows.

(If you don’t have mini marshmallows, you can cut up big marshmallows.) Spoon into a greased loaf pan. This makes a large loaf–use your largest loaf pan.

Bake at 350-degrees for one hour.

Makes one delicious hot chocolaty loaf! Goes good with a cup of hot cocoa.

*Try these in mini-loaves for holiday gift-giving! (How long it would take to bake would depend on your mini-loaf pan size. Probably 20-30 minutes.)

    I will definitely make this one once it cools down a little bit. With 86 degrees outside (CA) I am not really in the mood for hot chocolate right now. But it looks so yummy, I might change my mind and bake it for the weekend. It is supposed to cool down a bit anyway. Reason enough to try it out, I think …. :sun:

    Oh my that does look good. Can’t help but notice its a cousin of Irish soda bread with the baking soda and butter milk for the rise. Have you considered making it with with soft cake flour instead of AP flour. It should work very well. BTW if you can make buttermilk biscuits with cake flour you have all the basics to make soda bread and scones too. Its all in how you cut the dough. Thanks for the amazing recipe.

    Made this tonight but I’m wondering why my marshmallows melted completely and yours didn’t? It tastes good still but I was hoping for some yummy warm marshmallows in there.

    I made this today, and loved it! I baked it in mini loafs, and my marshmallows melted too. I think this would turn out great as a cake. Add some graham crackers, and you could have a smores cake.

    Me and my two youngest (2 and 4) made this today! My 4 year old daughter is a hot chocolate addict, so I thought this would be fun for her. Turned out great, our mini-marshmallows melted though, and I didn’t have buttermilk, so I used lemon juice+milk.

    I bet this would be adorable baked in big oversized mugs. My loaf pan didn’t quite hold all the batter, so I used a couple small round baking dishes/ramekins and just took those ones out earlier than the loaf pan – they turned out fine!

    So Husband and I decided to make a “hot cocoa” basket for christmas gifts. a Jar of this bread if I can manage it, and I am going to find a nice homemade cocoa powder too.

    I will be experimenting though. I use buttermilk powder, which I reconstituted for this recipe, but to try it for the can, I am going to just add the powder, and then add plain water and see how it works out.

    Made this today and LOVE it!!! I made the mini loaves. Cooked it for 25 minutes and the toothpick came out clean. My only problem is that the centers collapsed while cooling. Did I do something wrong or do you know what I can do different to keep them from collapsing?? Thanks Suzanne. BTW I LOVE your blog. I read it daily (sometimes more then once) also my 12 yr old daughter loves to hear the clover stories and your other posts. Thank you!!!!!
