Blanching and peeling, I mean! I wouldn’t quit canning, ever.

It’s a rebellion of sorts. Hello, I’m busy. Rather than blanching and peeling then canning my tomatoes, I’m coring then roughly chopping before placing in my food processor to puree. The peels are blasted to smithereens. I’m canning in my pressure canner per plain (unseasoned) tomato sauce for use in pizza, lasagna, spaghetti, and so on. Whenever I make fresh tomato sauce, I never peel! Got to thinkin’…. Why am I peeling before I can? I know, I know, they tell ya to. Nothing ickier than a big slimy piece of peel. But if you blast it to smithereens in your food processor….. Now you’re talkin’.

You got any tips for quicker canning? Easy peasy, that’s what I’m about this week. Tomatoes are in, people! Need a BBB to go with?

    We find the seeds in the tomatoes we grow tend to turn sauces a little bitter sometimes so we cook the tomatoes down and run everything through the food mill to get rid of the seeds and skins.

    I have a Squeezo food mill that was a hand-me-down from my Mom when she got a bigger one. I cut the tomatoes in quarters and cook them down, then run them through the Squeezo, which separates the juice and pulp from the seeds, skins, and cores. Then it’s into jars and the pressure canner! Summer goodness all year long! BBB!

    I cut my maters in quarters and put through the squeezo without any cooking. Then I just can the juice. Works great. BBB please!

    I agree! There’s no reason to peel tomatoes that you are going to can for sauce. For the past few years, I’ve been washing and coring them, then tossing them into a big pot to stew. Once they’re cooked soft, I just plug in my stick blender and stir it around in the pot to break up the peels. I’d hate to throw away all that good nutrition, great taste and added fiber. BBB

    I remember canning w/my mom when I was young: blanching, seeding, uuugh! I love my food processor for tomatoes- but I think I am going to try my stick blender that trailshome mentioned.Sounds like even less to clean & I’m all about that!! A BBB would be great!

    I freeze my tomatoes until I get enough to can.The skins slip off when they defrost. Then I dehydrate the skins and make tomato powder with the skins. Nothing wasted! I would love the BBB! Thank you!

    I haven’t canned yet. I just freeze my sauce when I’m done cooking it. I never thought to just blend the skins into oblivion.

    Gosh, that sounds like a great idea. Alas, no food processor. I keep saying I’m going to see if I can get one that fits the KA. But I don’t. I remember canning tomatoes with my mom and my job was to squish them through the pointy cone colander with a wooden pestle. Yeah, that long ago. Maybe I’ll up-grade to one of those food mills.

    I quarter mine, place them in the steam juicer and get some of the juice out of them. Run them through the Kitchen Aid Food Mill 3x and it just about the right consistence for sauce. Cook down a little, add seasonings, etc and can away. Sometimes I go further and do pizza sauce (I like mine spicy) and then even further by doing spaghetti sauce with meat. Then I have tomato water, which is yummy and can dehydrate the peel/seeds and grind to use as thickener, etc.

    It’s been so hot and dry here in our part of Kansas that our tomatoes haven’t been producing much of anything yet. Hopefully if the weather cools and we get some rain we’ll start enjoying some good tomato sandwiches…finally. Please put me in for the BBB!

    NO tips for canning, however, tomato peels, dried and run through the grinder, are a great addition to soups, stews, sauces, salad toppings and anything else you can name. That’s my plan for all my tomatoe peels this year.
