Jul

This red potato salad is one of my favorite chilled salads, perfect for summer, full of flavor and packed with my next favorite thing after bread–potatoes. Okay, chocolate is in there somewhere, too. And pie. And–

Oh, forget it. I love food…….

How to make New Red Potato Salad with Sour Cream & Dill:

2 pounds new red potatoes
3 boiled eggs
1/2 cup chopped onion
1/2 cup chopped celery
3/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon white vinegar
1 teaspoon dijon (or regular) prepared mustard
2 teaspoon dried or 1 tablespoon fresh dill
1/2 teaspoon salt
1/4 teaspoon pepper

Cut up potatoes (leave skins) and boil. Cool and drain. Chop eggs, onion, and celery, and combine in a large bowl with potatoes. Add mayonnaise, sour cream, vinegar, mustard, dill, salt, and pepper. Mix thoroughly and chill.

That’s it. So easy. So good.

*********DROOOOOOOL*********** That looks SOO good! My grandma made a potato salad that we here moms- it has a cooked dressing that you let cool before you put on the salad. 1st time I have eaten it and she swears she has made it for years… NOT

YUM! Red potatoes make really good potato salad. I’ve got a huge bag I need to use up and will be trying your recipe. Why not, all of your other ones have been great!
BTW – Have you seen what has happened to the price of potatoes? Come on garden GROW and spare us the rising food costs!

  6. Crystal B. says:

  7. Suzette says:

What a beautiful potato salad! It’s a balance of many good things. This may be on our weekend’s menu. Along with another stab at whole grain Grandmother Bread. 🙂

  8. Diane says:

That looks yummy. I making pulled pork barbecue this weekend and that looks like a good side to go with it. Thanks for sharing!

  9. Amy Addison says:

If I was not already a devotee of my husband’s potato salad, I’d give this one a try…it looks delish. And with those in my family with milk allergies it just means MORE FOR ME!

  10. Donna says:

Is that not the CUTEST pic of Coco!! OOOH, I want to hug that big ball of fluff!

I have made potato salad lately…but I am so finicky. I like creamy potato salad. I don’t like chunky, and I would NEVER eat a peeling. I know, I heard it for years from mother “that is where all the minerals and vitamins are”..ick, so what. :fryingpan: My husband eats them, so when I am hurried, I steam them just like above and serve them to him…but if I eat a couple, I will remove that peel first. His grandfather had a poato farm in NY…they even eat them RAW. ICK…HATE potato skins at a resteraunt too…YUCK…but I have to say, your salad is PRETTY. I make my creamy potato salad about the same way. My sister love the German potato salad, served warm or hot.

  11. Donna says:

I think German potato salad has purple onion, bacon..but I know it is served warm. I just like CREAMY!!!

  12. Kathy R says:

Would you invite me for a meal? I’m not picky…I love your breakfast, lunch, and dinner recipes. Or just have me over for dessert. I like butter on my butter, and there isn’t a kind of chocolate I don’t like. My perfect food includes both, with sugar to boot. English toffee (butter) covered in chocolate, and crumbled into rich vanilla ice cream with a swirl of chocolate fudge makes me swoon. Oh no! I just did the dishes from breakfast, and I’m already craving ice cream. See what you do to me?

On another note, this year it looks like I’ll have an abundance of tomatoes, and a few beans, and not much else with all the rain. Do you have any recipes for tomato sauces or ketchups and salsas that I could can?

  13. Shari C says:

Oh, your new red potato salad sounds wonderful…definitely have to try this one. Thank you.

  14. Dejoni says:

This is the way I make it…it is SO good. I think I will make some tonight. Thanks for the excuse to go off the carb diet!

  15. jean says:

Now this is a potato salad recipe that I would make! Thank you. It looks like I’ll be busy this weekend.

  16. Shimmy Mom says:

I love potato salad, I think it is the staple side of any BBQ!

  17. Debbie in Memphis says:

It looks YUMMY and so easy. I’ve got to give it a try.

  18. Shasta3 says:

oh so yummy!!!! Red potato salad is my FAVORITE!!! I can’t wait to try this new recipe. I’m salivating!!

  19. catslady says:

I’d be as big as a house if I made half of your wonderful recipes. You probably wear off all those calories working on your farm and I, alas, sit at this computer too long lol.

  20. AndiK says:

Do you have any suggestions for a substitution for the celery? I’m not a fan of it, but every potato salad (or chicken salad) recipe seems to call for it! Should I just leave it out, or is there something that I’m not thinking of that can provide that subtle crunch?

  21. Suzanne McMinn says:

Hi, Andi! How about sweet green peppers? (Or even red or yellow.) Do you like those? I think that would be good in this salad.

  22. Estella says:

    I love potato salad!

  23. Brandy says:

Can I leave out the eggs? I detest eggs. Looks yummy!

  24. Suzanne McMinn says:

Yes, if you don’t like eggs, just leave them out!

  25. wkf says:

    add bacon! :flying:

  26. AndiK says:

Great idea! I love sweet peppers–I just never thought of using them in a potato salad! Thanks!

  27. Carolyn A. says:

Suzanne, I don’t think the potato salad marriage would work out. After you’ve eaten the groom … it’s over. Better to stick with 52. xxoo

  28. Leslie M. says:

This looks so good, and I am all about potatoes these days.

    Thanks!

  29. jaq says:

I just made this to go with tonight’s steaks. I substituted green peppers for the celery and added a dash of Worchestire(sp?) to the dressing. It was BIG hit! Definitely making this again. Thanks Suzanne!!

  30. Shells says:

OMG I love this salad. I keep a bowl of the dressing mixed in the fridge so that on a moments notice I can have this potato salad. I am thinking of moving to Ireland so I can have potatoes every day.

  31. lauren says:

This is my new potatoe salad!! the only one I will make 🙂 We like to add chedder cheese and bacon pieces for a baked potatoe potatoe salad, just like they sell at a local upscale grocery store for 7.99 a pound!!!!
