Peach Conserve with Rum

A long time ago in a galaxy far, far away…. Like, last summer in my kitchen…. I put away more bags of sliced peaches in the freezer than I can count. (Actually, I can’t remember now how many bags of peaches I put away. Almost as many as pears, though.) I was far too busy processing fruits and vegetables to can everything, so I froze quite a bit to take out later when I had time to make Christmas presents. I’ve had a hankering to make this peach conserve recipe for months–and yesterday was the day!

What is a conserve anyway? A conserve is a jam-like thing that is not jam. It usually contains two or more fruits and sometimes nuts and raisins. A conserve should be cooked until it rounds up on a spoon, but it’s not as thick as jam. This peach conserve recipe is from the Ball Blue Book, though I did a few things differently. The recipe suggested chopping the cherries. I left them whole. I added extra peaches, too. I wanted it real peachy. I also doubled the recipe entirely (along with adding more peaches).

I also never did get it to round up on the spoon properly, but I decided that was okay. I left too much liquid in from the thawed peaches. I suggest you don’t do that. This was my first experiment in substituting fruit that had been frozen in a recipe calling for fresh fruit. Live and learn! What I ended up with was more of a cross between a conserve and a compote (fruit cooked in syrup). I’ll tell everybody it’s peach compote with rum when I give it to them. I bet they won’t mind.

For me, doubling this recipe, I made about four pints (though I used some odd size jars, which is why you see five jars in this post–it’s about four pints, if I’d been using all standard size pint jars). The recipe as written below will make you two pints. (Why would anyone make only two pints of this???)

How to make Peach Conserve with Rum:

3 tablespoons slivered orange peel
2/3 cup chopped, seeded orange pulp
2 cups chopped, pitted, peeled peaches
3/4 cup crushed pineapple
1/2 cup maraschino cherries
3 tablespoons lime juice
6 1/2 cups sugar
1/2 teaspoon salt
1/2 teaspoon ginger
1/4 teaspoon mace
1/2 cup rum*

*You can make this without the rum.

Combine orange peel and pulp with just enough water to cover in a small pot. Cook until peel is tender; set aside.

Place opened bottle of rum in hot water and let sit. Don’t drink it! Stop that!

Combine orange mixture with peaches, pineapple, cherries, and lime juice. (Drain everything! Ask me how I know that…. I had to filter out the excess liquid later. It was too much.)

Add sugar and spices, stirring until sugar dissolves.

I buy sugar in the mega bags at Sam’s. (The biggest size I can stand to lift.)

Cook rapidly almost to the gelling point.

Stir frequently to prevent sticking. The instructions say to add the rum now. I wanted to pack the jars full of fruit. I didn’t want to be canning liquid! Or wasting rum. I strained the fruit before ladling into the jars. I added some liquid from the pot then poured in the rum, directly into each jar, topping it off to leave 1/4-inch headspace.

Remove air bubbles and adjust lids and rings. Process in a hot water bath for 15 minutes.

I’m still canning outside.

I think these jars came out gorgeous and it’s going to be hard to give them away! (I’m planning on making more of this recipe, and several others, before Christmas for gifts. Maybe enough to keep some for me!)

      One jar is hiding behind the others!

      As one of the comments mentioned, ladling over pound cake would be great! Also just over ice cream. You could put it on top of french toast. Etc. Anything! (A properly gelled conserve–which this one wasn’t–could also be spread over toast like jam.)

    You should try American Crystal sugar. A quality sugar grown in the Red River Valley!

    Try draining off the extra juice from the frozen fruit early in the process (before you combine ingredients) then boil it down to a syrup to concentrate the liquid. You could then add it back into the recipe and it will add flavor and help thicken the fruit some. This way you get the great taste added back without over cooking the fruit until it disintegrates. I do this when I’m making apple butter. I boil down a quart or two of apple cider before I add the apples. Makes it easy to add lots of flavor without cooking everything to death and you don’t run the risk of burning the bottom of the pan so easily. One of these days I want to make pumpkin butter using cider boiled down this way. I think apples and pumpkin are flavors that would marry well together and it would take less sugar to sweeten that way.

My hubby went crazy buying oranges and we just didn’t eat them so I peeled and froze them even saving the peels, thanks to my handy dandy food saver.. Wonderful invention! I’m scared to let anything go bad because the economy seems to be getting worse. I wasn’t sure what to make with them but having lived in south Florida for a while I thought about making an orange pie but I like your idea much better and what great gifts. Its almost like you read my mind.. 😆

    Ok, that’s it! I have been told that I can have a canner for Christmas and I’m doing it! I could have one anytime, but just have been to busy to use it. I’m getting one. I do have a waterbath canner. We are using it for an ash pot with the wood stove. I’m a little afraid to can things without pressure. Do things with vinegar, tomatoes and sugar really keep a long time without pressure? I need to try that. I will have to find another ash pot for the wood stove. Large metal items with lids are not that readily available.

    I could have canned tomatoes this year but was just too busy. Now that I am no longer working outside the home, I am busier than ever but that will be over after Christmas and I will learn to can.

    I would love that Blue Ball book on canning.

    Good Morning :snoopy: Wow those cans are beautiful. Yummy and I am thinking that these would be easy enough to make surgar free for my hubby. First I will try the orginal recipe with the real sugar then I make another sugar free to see how it turns out. lol. One for me one for him.
    The canning book would be so helpful!!!! Did I tell you how I think I really want to learn to can. Today I am considering buying a grill for this. Outside canning sounds like a good idea if one does not have enough room on their stove. Hubby will be please. I might even grill on it. lol.

      Jenny, that reminds me of my hubby’s recipe for chili. It calls for a six pack of dark beer. One bottle goes in the chili and you must drink the other five while it’s simmering. Supposedly, it ALWAYS makes the chili better than ever. Now,a daiquiri recipe would be more to my liking!

    You bring back such fond memories of my grandma, and then my mom & aunts talking about how beautiful their canned goods were.     Oh this sounds yummy wonderful,but I can’t use alchol in anything I cook – do you think I can leave the rum out? I have several receipes like this with alcohol in them so I do’t use them because I don’t know what it does to the chemistry and with canning I don’t want to hurt anyone – but I’d sure like to make them without the alcohol.     Those jars look lovely. I remember grandma making something called “Paradise Jelly” out of quince. It had other fruit in it and walnuts. Delicious. I took in to school for lunch one day, on bread spread with cream cheese and a schmear, as they say, of jelly. The kids thought jelly with nuts in it was just too weird. Had to have it at home as a after school snack after that. Does anyone have the recipe for this? Ours was lost, didn’t need it, no quince.

    Maybe its in the Ball canning book. Love to have it so I can continue the family tradition of embarrassing my children with unusual home made lunches at school.

    Just a thought about adding the rum in the peach conserve.
    I thought the heat from the cooking made the alcohol evaporate and just leave the flavor, such as with vanilla. So there wouldn't really be any alcohol in the finished peach conseres. That's what I was told….not sure if I am right or not?

    I Would love that book! My mom canned all the time when I was growing up, but never had the patience to teach me anything about it. She’d done all that with my older sister, so I was out of luck. I have been married almost 20 years now and I’ve finally decided I want to start trying things I never did before. I’ve baked Grandmother Bread (we did your cornmeal yeast rolls for T-Day and they were wonderful!), I’ve made chocolate meringue pies, and pumpkin pies for the first time in my life. Guess there’s a first time for everything. I would love to start canning. Those peach conserves are GORGEOUS! Keeping my fingers crossed! :happyfeet:

    Suzanne, that sounds delicious. I like extra peach too. I’d also really like a copy of the Blue Ball book to share with my sister. We don’t have peach trees, but she grows a lot of strawberries, blueberries, and raspberries we could can.

    Yes, I don’t see any reason why rum flavoring wouldn’t work. The rum is really an extra in this recipe and not necessary if you want to leave it out entirely.

    Am going to the store tomorrow to buy lots of cranberries to make the sauce to give as Christmas gifts, Even my friends who thought they didnt like cranberry sauce loved this. I made jello today with fresh fruit and added some of my sauce and nuts, it is delicious.

    Is there any way to make this without the use of Rum (or any alcohol)? Don’t like the taste – which is a good thing, since it’s against my beliefs to drink alcohol. But I don’t like the “essence” or Extracts either. Ok, so I’m weird. :butterfly:

    Hi,I can quite a bit and am always looking for some new and interesting recipes. I found this one and it sounds awesome. Just have a few questions. I assume that the pineapple and cherries are canned not fresh. Is that correct? Also I have never heard of mace, what is it? Also, this sounds lame, however, I am going to ask anyways.       Yes, I used canned pineapple and maraschino cherries. Mace is a spice that is sort of similar to nutmeg but not! You can find it in most grocery stores in the spice aisle along with all the others. You can use conserve just like you would use jam–on toast, on top of oatmeal or ice cream or yogurt etc. I also use it in baking, such as in coffeecakes or biscuit twists etc. Lots of ways to use it! Oh, also, topping on yellow cake or pound cake, yum!
