Rum Toffee Spoons

Following up on yesterday’s Cast Iron Pan Candy post, I had to make the dipped spoons. Using the quantities in the post (1 cup butter, 1 cup brown sugar), I made just over two dozen dipped spoons! I was so happy with them, I made a second batch because I want to put some of these in all my gift baskets and boxes this year. I used a splash of rum for the flavoring. You could use orange juice, lemon juice, vanilla, or whatever else you want–or nothing. The added flavoring isn’t required. I topped them with chocolate candy sprinkles.

I started out planning to just take a picture of these and make them my Daily Farm Photo shot of the day, but by the time I was finished making them, I realized it would be the longest Daily Farm Photo post ever because I needed to show you more pictures and I needed to tell you too many things.

Like, I needed to show you and tell you about this sad, sorry, pitiful spoon.

Wouldn’t someone be thrilled to get that?!

WARNING! Don’t dip the spoons immediately. Turn the candy off and keep stirring it as it cools slightly. When I dipped the spoons immediately, the plastic melted! Stir and wait till the candy sets to a pudding-like consistency then scoop (rather than dip) each spoon into the candy. Sprinkle with chocolate bits and let set.

Another good idea would be to get some pretty “old” metal spoons at an antique or second-hand store instead of using plastic.

Plastic spoons do work, though–just be careful. When you think it’s cool enough, try one spoon, let it set a couple minutes to see if it’s okay, then continue. (I messed some up before I learned that lesson.) I used some heavy-weight clear plastic spoons for some of them and I found I could scoop the candy into them sooner than I could with some other lighter-weight white plastic spoons that I used–so, I can’t tell you exactly how long you’ll have to wait. It will depend on the weight of plastic in your spoons. Just keep testing one at a time until you have the right temperature for your spoons.

In spite of the initial mistake with dipping the spoons too soon, I think these came out great! They make sweet additions to a gift basket–or give a dozen or two dozen of these as a gift in and of itself. You’d be making someone’s coffee happy for weeks!

This keeps the candy level in the spoons until it sets up.

Until gift-giving time, you can store these in airtight containers or plastic baggies. (I just loaded them all into a big plastic Ziploc bag.) Also remember to lightly spray with oil, or butter, the surface you place the candy spoons on while they’re setting up so they don’t stick. If any of the candy spoons drip out so they stick to each other, pull or cut them apart before the candy is completely set.

P.S. This is SO MUCH less expensive than making chocolate spoons–and I think they’re better, especially for coffee!

    This does look really good. We dont drink coffee here. I have also seen the chocolate dipped spoons and could not understand what you would do with them, until other day I was out and saw the little chocolate coated coffee straws.     The last one with the melted spoon…I think that one needs to just be eaten. I wanted to ask if one does not have a candy thermometer how do you know when the candy is done? Would like to make these but I have never made candy

    Oh my goodness! They look great, but please, please don’t use plastic spoons! Chances are, the contain BPA, which is bisephenol A, a powerful endocrine disruptor (look for a triangle containing 03 or 07 on the packaging or product, those are especially dangerous), and should never be heated, because that is exactly what triggers the release of the bisephenol.

    I wasn’t going to try for one of the BBBs, but I took a look at my old Blue Book and I think the missing cover, the yellowed and dog-eared pages spattered with fruit juice and tomato sauce, not to mention the missing middle 4 pages as well, speak to my need for a new edition. I say MY old Blue Book, but I think it was the one that disappeared from my mother’s kitchen years ago then returned to its old spot when I moved back again.

    Butter Rum, say it slowly, bbbuuttteerr rrrrrum, that is just heaven! We tried to make chocolate caramel dipped pretzel wands for Halloween but in WNY there is a humidity problem. We had to leave them on the broadshelf for a day, one of our cats jumped up there and, well, nobody wanted mink wands. What do you do with your animals when you make sticky treats?

    I see the computer is a city kid. It doesn’t recognize the word “broadshelf”, neither did my husband. It just means kitchen counter top.

      Glad to help, Maggie. It’s kind of a double whammy of badness, because first the BPAs get released into the candy, then they get released into the coffee or whatever is stirred. Anything plastic with BPAs should never, ever be heated or put in the dishwasher, etc. 🙂

    Well, I’m glad you put this post here instead of just the picture for a different reason. Today’s picture of Diego on the straw brought back childhood memories of another pair of cats. My father brought those two kittens home from work in the pockets of his coat.     I’m glad you addressed the clean up issue. I wanted to make the candy but was frightened for my cast iron which is at present perfectly seasoned. It seems as soon as I get it right I cook something in it (spaghetti sauce, what was I thinking?) and it has to be re-seasoned. I have a bottle of rum ready and can’t wait to try it now.       To Rebecca: divinity candy was described by my grandmother as the “fussy bear of all candy” in the making. Humidity affects some candies dramatically, ie, her comment: NEVER make divinity on a rainy or even overcast, smelling-of-rain day (my regrets to those in soggy areas!). Personally I love and bake cookies as they’re not fussy in the least. However I certainly don’t turn down a homemade candy gift!

    I know there is plastic that can’t be heated, even water heated in a hot car can be dangerous.
    The plastic waterbottles and pop bottles for instance.
    But I think that if they make spoons out of plastic, to eat soup with..it is perfectly safe to make spoon candy.

    Will no one thank “S” for her/his timely warning? Bi-phenols are deadly compounds. Drinking HOT liquid from a “styrofoam” cup is begging for cancer and/or birth defects…Don’t get me started on the plastic spoons.
    PLEASE…restrict your use of “plastics” anywhere near your foodstuffs! This includes “plastic wrap”, mmm…yummy PVC’s (poly-vynalchlorides)…also, aluminum foil is NOT your friend but IT IS a specific poison
    I admire this site and the “good work” Suzanne does…she’s a master of self-promotion…and there is nothing wrong with that, but those of us with bio-science backgrounds must often cringe at the sort of “plastic spoon” stuff we’ve seen today.
    I will be back as a “guest-lurker” having voted everyday to promote Suzanne’s ambitions–but please bear in mind that her self-promotion may not be in YOUR best interest.

      Berta, If you scan back to a few posts after S. helpful information on Bisephenol I think you will find that I did thank her and I suspect some others took note as they mentioned using metal spoons. (Sometimes you have to read between the lines.) But it doesn’t hurt to have another voice the same concern. So I thank you as well for your reiteration of the dangers of “plastics”. All of us have certain issues that we feel strongly about. Mine is using Pressure treated wood! I hope I haven’t offended you or anyone else.

      You also wrote about self-promotion, and I have to say: I think Suzanne is finding her way with this blog and is doing a beautiful job. She puts so much time and energy (and herself) into it, and I enjoy it so much, that I hope she finds a way to make it profitable for herself. Just like I expect the author whose books I read, and the actor whose movies I watch, and the inventor whose products I use to profit from their work, I think Suzanne more than deserves to promote herself in the way that she sees fit so that she can continue to share her world with us.

    I forgot to say earlier that made your Overnight Cinnamon Rolls last night Suzanne, breakfast this morning was sublime. A mixed fruit salad and wonderful cinnamon rolls… true, I should have had some kind of protein too, but it was just not to be this morning! Does it count that there was about half whole wheat flour in there underneath all that cinnamon and sugar and butter and orange marmalade? Yeah… that’s what I thought but it sure tasted great!

    Berta — using plastic spoons are a choice. Same as when a person purchases plastic spoons, usually to east soup with…….Suzanne did not invent the plastic spoon and in no way is self promoting herself! She did suggest using real spoons if a person wanted. And please, stay away from canned food if you do not want BPA in your system. Virtually every canned product, even those labeled organic, has a liner with BPA. One brand, Eden Organic Baked Beans, says it uses a BPA-free can.

    Berta, I’m confused on your post. It appears to show concern for others by reminding them about minimizing use of plastics in food preparation. And I can see the topic is a passion for you. Why you felt the need to expand from a friendly reminder to personal comments about the site owner is beyond me.

    Thank you for your health/safety reminder but the rest of your post came across as downright rude and unnecessary. From following Suzanne’s blog I haven’t seen any self-promotion but only offerings from her heart.

    The comment section is for additional community sharing of ideas and thoughts. Again, if you had special health information willing to share with other readers, that was appropriate and appreciated. The rest was not. When you return to lurk and check on your post I suspect it will be exactly where you left it.

    Personally I’m well aware of all the toxic plastic research and not worried at all about making a few of these spoons for single special occasion. You may be disappointed with me also, but that’s fine because we’re all entitled to our respective and respectful opinions. :snuggle:

    The health issue with plastics is a good thing to learn about. I will be more aware for sure. I wonder about the plastic that cheese is wrapped in. Plastics definitely are everywhere all around us. I wonder about waxed paper. You younger readers may not know about this, but back when I was a kid, before the days of plastics, cereal boxes were lined with waxed paper. Housewives such as my mom and grandmothers saved it to wrap sandwiches, etc. to put in children’s school lunches and husbands’ work lunches, as well as, for uses in the kitchen. A rubber band held it together so it wouldn’t unwrap. We could buy it in a roll same as today, but it was just one more of their penny pinching secrets. I have done it myself. Now the boxes are lined with some kind of plastic.

    You could also spray a deviled egg tray and place the spoons in the dips. Since they are shaped similarly to the spoons you wouldn’t have the flat spot on the bottom of th spoon from a flat surface.
