The Sloppiest of Joes

If you haven’t had a sloppy joe since you were a kid, and if it came out of a can, or if you just need an easy supper idea for tonight, this one is for you.

Sometimes I have to really remind myself that Morgan and I aren’t chopped liver and that just because it’s only the two of us that doesn’t mean we can’t have a delicious meal every night. Because it’s so easy to fall back on our favorite standbys, pizza or grilled sandwiches. Which are delicious, too, but Morgan probably ate 100 grilled sandwiches last school year and another 100 pizzas. I’m trying to do better!

This was last night’s supper.


How to make Sloppy Joes:

1 pound ground beef, lamb, etc
1/2 to 1 cup chopped onion and/or peppers
8 ounces tomato or spaghetti sauce
2 tablespoons quick-cooking rolled oats (for thickening)
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon cayenne powder
hot sauce*
1/2 cup water

*Depends how hot you want it. I use 1/4 cup. You might just want a dash.

Brown ground beef with onions and/or peppers. Drain. Stir in remaining ingredients and simmer until thick as you like it and pile it between toasted or grilled buns or sliced bread. I used some thick-sliced Grandmother Bread pan-fried in a little bacon grease.

How easy is THAT? This is a 30-minute meal for rushed or lazy nights and kids LOVE it.

Makes 4-6 sandwiches, depending on how high you pile it on! I like ’em sloppy.
