Yogurt and Granola Bread

I’ve been on a yogurt and granola kick lately. Yogurt–with jam–and granola for breakfast. Every day. Eventually, yogurt in a bowl wasn’t enough. I needed to bake some bread with yogurt. And granola. I thought about putting the jam in there, too, but decided it could just go on top of a thick buttered slice right out of the toaster. Decisions, decisions!

This bread is based on my Quick Mix baking mix. You can use another baking mix, or I’ve also included the scratch recipe here.

I’ve been making my homemade granola with this recipe. (I make mine with molasses and add walnuts.) You can find all kinds of homemade granola recipes at Farm Bell Recipes here.

I make my homemade yogurt using the crock pot method.

Milk the cow, make the yogurt, and make the granola. Or! Get some yogurt and granola at the store! (Lazy!)

How to make Yogurt and Granola Bread:

3 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup sugar
1/4 teaspoon baking soda
1 egg
1 2/3 cups plain yogurt
2/3 cup milk
1/4 cup vegetable oil
1 cup granola
1 cup chopped dried fruit (optional)

Note: To use my Quick Mix or another baking mix, replace the first three ingredients with 3 cups baking mix. Instead of 1 cup of sugar, use 3/4 cup sugar. Add remaining ingredients as listed.

Second note: If you want this to be less of a sweet bread, cut the sugar in half–or more.

In a mixing bowl, combine flour, baking powder, and salt, or 3 cups baking mix. Add sugar and baking soda. Add egg, yogurt, milk, and oil. Stir just enough to combine. You might need more or less milk depending on the thickness of your yogurt. You should have a dough that can be spooned out of the bowl into the bread pan–more the consistency of drop biscuits than of rolled biscuits. Gently stir in granola and dried fruit, if using.

If your granola already has dried fruit in it, you probably don’t need to add more. I’m not in a dried fruit mood at the moment, so I didn’t use any. (What is a dried fruit mood? Whatever it is, I’m not in it. That makes a lot of sense since it’s winter and all…..and there is no fresh fruit! At least not from home….. Are you in a dried fruit mood? I need to know.)

Use a large greased loaf pan, such as a 9 x 5. If using smaller pans, divide into two or more pans. Or use mini-loaf pans.

Whatever you use, get that puppy in the oven.

Bake at 350-degrees. In one large loaf pan, it will take about an hour. Keep an eye on it. Reduce the time for smaller pans accordingly. Smaller loaf pans will be done in about 45 minutes, mini-loaf pans in about 20-30 minutes, depending on your mini-loaf size.

Cool completely before slicing or slice warm with an electric knife. Wrap tightly to store.

This bread has the delicious tang of yogurt with a little granola crunch. Good with jam! (I’m always in a jam mood.)

    This bread looks superb! When I make it, I will add some raisins as I am ALWAYS in the mood for some dried fruit. In fact, I made another fruit cake just last week – since one was not quite enough over Christmas.

    Yummy recipe! I do have to point out though that not everybody has a cow to milk. And some of us who do have cows (like myself) would end up at the bottom of 4 hooves if we tried to milk said cows. LOL Just sayin’! It’s not a bit about lazy – just self preservation. 🙂

    I’m in a dried fruit mood, lol…but then, I have home dried cherries and apricots in my pantry. I’ve made the granola and we love it. I purchased more rice crispys to make another batch this coming weekend. The bread looks really yummy. May have to try it too!

    That top photo is really very good. The warm browns and yellows of the bread in the foreground in sharp focus, with the ingredients just suggested in the background. The way the glass jars of granola and flour catch the highlights. The lovely bowl of eggs that stands out because of the dark salt box behind it, but doesn’t dominate because of the soft focus. That picture just WORKS! It makes you want some. I’ve seen many photos in cookbooks and magazines composed by professional food stylists that weren’t as appealing.

    i just made this with my first effort at homemade yogurt (turned out great!) and homemade granola and it is wonderful:) i’ve had good intentions of eating more yogurt and granola, but they’ve never been able to share space in my diet with breads for breakfasts and snacks…now you’ve brought together the best of all possible worlds for me. thanks!

    I just found your blog, and I’m so excited to try out your recipes! My kids (homemade pop tarts!) and husband (hmm… EVERYTHING!) are excited that I found your blog too! I just tried this recipe (though I did change it a bit- reduced the sugar, 1/2 whole wheat, vanilla yogurt) and I loved it. More importantly so did my husband and kids (all 6 of them!).

    I’ve been wanting to make this for a while, but I always seem to find other uses for all the yogurt I make. I finally made it the other day, but replaced the yogurt with 3 overripe mashed bananas and enough yogurt to make 1 2/3 cups. I used some banana granola that was expired, used mostly whole wheat flour, and cut the sugar in half. The bread was great! It turned out like banana bread, but less cakey and more bready, if that makes sense. I put some raisins in it, but next time I’ll add some walnuts for more crunch. Thank you for this!
