A Mess of Marmalade


Got oranges? This is the time of year school kids are selling boxes of oranges. I ended up with a box and a half because somebody else who bought oranges didn’t really want theirs. I made 15 pints and 14 half-pints of orange marmalade, which is the most delicious way to plow through a box of oranges that I know. Try it! You’ll like it! My recipe is here!

    How wonderful, we have orange marmalade every morning on our breakfast toast. I use it a lot in cooking as well.

    I made my first batch of orange marmalade this fall! Reading English novels made me do it. I am embarrasses to list how many things I have bought due to reading novels: Electric tea kettle; French press coffee maker……I still wonder what they are calling ‘tea cakes’.

    I also recently made cottage pie and it was delicious. Once again, it was in a novel.

    In historical novels they grew citrus in what we call greenhouses/conservatories.

    Ooolala! I LOVE orange marmalade (fine sliced peel is my preference) on buttery croissants hot out of the oven — c’est si bon!

    I read that ‘marmalade’ was a generic term used for any thick fruit paste, mostly quince, that got very dark when cooked and honey was added, it came from Portugal. One Mary Kettileby is credited with the first recipe of marmalade as we know it, she added the lemon to the oranges and boiled it fast until “it jellied” and then poured it into jars. God bless your cotten socks Mary!
