3C Bread

This is a wonderful, fancy bread that is very delicious!

Difficulty: Intermediate

Servings: 6 to 10

Prep Time: 45 min.   Cook Time: 60 min.  


3 beaten eggs
1/2 cup cooking oil
1/2 cup milk
2 1/2 cup sifted flour
1 cup sugar
1/2 cup raisins
1/2 cup chopped pecans
1/2 cup maraschino cherries cut in halves
1 tsp. cinnamon
1/2 tsp. salt
2 cups shredded carrots
3 1/2 ounce can coconut
1 tsp. baking powder
1 tsp. soda


Combine eggs, oils, and milk. In large bowl, sift flour, sugar, baking powder, soda, salt, and cinnamon. Add egg mixture and mix till just thoroughly combined. Stir in carrot, coconut, cherries, raisins, and pecans. Grease 9 X 5 X 3 loaf pan and bake at 350 degrees for 55 to 60 minutes. Remove and cool. Wrap and refrigerate overnight. Note: This is not a fruit cake. Serve it sliced and warm, with melted butter on each slice. This is great around the holidays or anytime!
