Apple and Fennel Slaw

What a wonderful refreshing salad. Great for the summertime.

Adapted from Earthbound Farms

Difficulty: Easy

Servings: 8-10

Prep Time: 30 minutes   Cook Time: none

2 cups thinly sliced Green Cabbage
2 cups thinly sliced Red Cabbage
1 Large Fennel Bulb, trimmed, cored and cut into matchsticks
1 cup Carrots, shredded
3/4 cup Raisins or Craisins or other dried fruit pieces
2 Tablespoons Fresh Lemon Juice
2 Large Apples, peeled, cored and sliced into matchsticks
1/4 cup Walnut Oil
1 1/2 Tablespoons Cider Vinegar
2 teaspoons Honey or Agave Syrup
1/4 cup Parsley, finely chopped
Salt and Ground Pepper

1. In a large bowl, put in the cabbage, fennel and dried fruit. In a smaller bowl, toss the apple pieces with the lemon juice. In yet another small bowl, combine the oil, vinegar, and honey; whisking vigorously.

2. Add the apples to the cabbage mixture. Toss. Add the dressing and toss again. Season with salt and pepper to taste. Refrigerate.

(Use of a food processor will make this really fast and easy to make)
