I love this soup in the winter! It warms you right up!
Servings: 6 to 8Prep Time: 30 minutes Cook Time: about 30 minutes
2/3 cup butter or margarine
2/3 cup flour
7 cups milk
4 large potatoes, baked, cooled, peeled, cubed
4 green onions, sliced
12 bacon strips, cooked & crumbled
1 ¼ cups shredded Cheddar cheese
1 cup (8 oz) sour cream
¾ tsp. Salt
½ tsp. Pepper
In large pot, melt butter. Stir in flour; heat and stir until smooth. Gradually add milk; stir constantly until thickened (about 10 minutes or so).
Add potatoes and onions. Bring to a boil; stirring constantly. Reduce heat and simmer 10 minutes. Add remaining ingredients; stir until cheese is melted. Serve immediately.
