Beef Stroganoff

This is from the “Just a Matter of Thyme: Among Friends” cookbook. It is so easy and my whole family loves it.

Difficulty: Easy

Servings: 4-6

Prep Time: 10 minutes   Cook Time: 25 minutes

2 lbs sirloin, cut into very thin strips
1/4 cup butter
1 yellow onion, peeled and diced
8 oz sliced fresh mushrooms
dash of garlic salt
dash of paprika
seasoned salt and pepper to taste
1/2 cup tomato juice
1 (10 oz) can cream of mushroom soup
8 oz sour cream
hot cooked noodles

Brown the sirloin in the butter, along with the onion and mushrooms. Add juice and seasonings. Cover and simmer about 20 minutes, stirring occasionally. Stir in soup and sour cream. Heat gently. Serve over noodles.
