Grandma Colleen’s Blueberry Cream Cheese Muffins
Servings: 12Prep Time: 20 minutes Cook Time: Thirty minutes
4oz cream cheese
1 Tablespoon lemon juice
2 tsp. vanilla
1/2 cup milk
4 tablespoons of melted butter
2 cups of cake flour
3/4 cups of sugar
1 1/2 tsp. baking powder 1/2 tsp baking soda 1 1/4 cups blueberries 1 1/2 Tablespoons sugar mixed with 1 tsp cinnamon
Preheat oven to 350 whip cream cheese with lemon juice and vanilla until smooth. Beat in eggs. Add milk and butter and blend well. Combine dry ingredients and beat into cream cheese mixture until well mixed. Fold in blueberries and pour mixture into greased muffin tins 3/4 full, sprinkle tops with sugar/cinnamon mixture. Bake for 30 minutes or until a tester inserted in middle comes out clean.
