Carrot Souffle

Delicious and beautiful. Makes any meal feel very special.

Servings: 6-8   Prep Time: 25 minutes, includes cooking the carrots   Cook Time: 60 minutes  


2 pounds carrots, cooked and smashed
1 stick of butter, you can use a little less
1/4 – 1/2 cup sugar
2 Tbsp flour
2 tsp baking powder
6 eggs beaten
1/2 tsp cinnamon


Mix ingredients well with mixer. Put in greased casserole dish. Bake at 400 degrees for 15 minutes then 45 minutes at 375 degrees.
