Fall in Love with Sifting

I do a lot of sifting. Cake frostings. Powdered sugar icings for coffee cakes. Glazes for sweet rolls. Sometimes this means sifting as much as four cups of powdered sugar. My hand gets tired! I milk a cow then I have to come inside and squeeze that manual sifter thingy.

But buy icing from the store?! No way.

Then one day, I thought, I bet they make something for that!

Oh yes, they do!

Because I’m slightly mechanically lost, I’m going to admit that when I first got it, it took me a few minutes to figure out how to use it. All you have to do is dump the measured powdered sugar inside the cup (which holds about 4 cups), push the “on” button, then push the handle in.

It was the pushing-the-handle-in part that I didn’t grasp at first.

My excuse is that it didn’t come with directions. (I thought I was doing good just to figure out that the battery compartment was in the handle. It uses 1 AA battery.) I finally figured out how it operates by accident. But once you do that, the powdered sugar sifts right through like magic and in no time. And it’s so easy. And my fingers weren’t tired afterward.

It’s labelled as a flour sifter, but I’ve never used it for flour, only for powdered sugar.

If you’ve given up making homemade icings because you have physical problems with manual sifters, it takes too long, or you’re just kinda lazy (me), this is for you! There are a number of these little sifters on the market. I tried this one because it was inexpensive. I can’t say how long it will last for the price because I’ve only had it for about a month, but so far I LOVE IT and homemade icing is my friend again.

And I can eat more cake!

Cookbook Giveaway!

One of our community grande dames, MMHoney, gave me three copies of the vintage Rumford Cookbook. Two of these copies are from the 1948 edition while the third is the 1918 edition. (The two copies in red above are the 1948 editions.) If you are a vintage cookbook collector, stay tuned. I HAVE A GIVEAWAY.

I examined the cookbooks for clues. I’d never heard of Rumford!

The first few pages tell us about Count Rumford. Benjamin Thompson was “the American ennobled by the courts of Europe because of his pioneer discoveries in cooking.” His accomplishments include being the first to study diet, to invent an effective oven, roaster, and tea kettle, to advocate drip coffee, and to suggest holes in the handles of pots and pans so they could be hung. He designed efficient kitchens, the modern air-tight stove, and the construction of oven doors.

But is this all true? Was there really a Count Rumford? Or was he like Cap’n Crunch who sailed the seven seas in the good ship Guppy and discovered crunch berries? Count Rumford was, in fact, a real person, but the Rumford Cookbook was written by Lily Hayworth Wallace (a food specialist and consultant) for Rumford Chemical Works, which developed and sold Rumford baking powder. The first edition was printed in 1908 and it continued to print subsequent editions until the late 1940s.

Baking powder was invented in the 1840s and was sold in two separate envelopes because baking soda and cream of tartar could only be combined at the last minute before baking. In the mid-nineteenth century, a chemist named Eben Horsford developed the concept of replacing cream of tartar with calcium-acid phosphate, and with the addition of cornstarch was able to make a combination baking powder that could be sold in one package. Together with his business partner, George Wilson, he started manufacturing this new combined baking powder at Rumford Chemical Works. Rumford joined with Calumet in 1950, which was the end of the Rumford name in the baking aisle and explains why we’ve never heard of Rumford today.* (see update note)

But my, oh my, do we owe them our cookies. And their cookbooks are a piece of culinary history.

The Rumford Cookbook does not, by the way, limit itself to baking recipes, despite its promotional foundations. It endeavors, according to the 1918 foreward, to present “the best dishes of their kind rather than take up space for repetition of the same general recipe” and covers the gamut from soups and salads to meats and vegetables to pastries, breads, cakes, and pies. It’s a fascinating look into the heartbeat of the kitchens of its time with lots of quaint extras. (What is a gill? A half a cup! Odd, that.)

*Update to note: This is an interesting page here. Apparently sometime after 1950, Rumford changed hands again and is now owned by Clabber Girl while Calumet was taken over by Kraft. According to that site, Rumford is still available (who knew? not me!) in New England and the Northeastern U.S. (though it sounds as if from the comments it can be found elsewhere). I’ve never seen it. Now I feel obsessed with the idea that I need some.

Cookbook Giveaway!

I’ve been purging, in case you didn’t know, and while the clothes went first, many other things have followed. I’m painfully going through cookbooks now and asking myself why I have certain cookbooks I’ve never used. As with the clothes, often there isn’t anything “wrong” with the books, it’s just that I have too many and can’t/don’t use them. These poor babies need new homes!

I’ll be giving some of these cookbooks (and other things) away here. I’m talking like new condition. I’m not giving away junk! But I’d rather one of you have it than just send it over to the thrift store, so here goes, first up: Mexico, One Plate at a Time by Rick Bayless. This cookbook is a companion to his PBS series and includes everything from authentic Mexican-style snacks and soups to main dishes and desserts (and drinks!). Sopes, chilaquiles, chile rellenos, seafood in mojo de ajo, chicken adobado, carne asada, flan, Mexican chocolate, and more. Somebody needs to make this stuff, and apparently it’s not going to be me!

Want to Win a Garlic Keeper?

It’s another cute and handy kitchen gadget giveaway weekend! I love garlic, and I love this adorable ceramic garlic keeper. Real garlic is always better than dried and powdered, but fresh garlic needs to be stored in a dry, cool (but not refrigerated), well-ventilated container. This little garlic keeper can store four to six regular size bulbs and keeps them in the ideal conditions with its ventilation holes–plus it’s pretty. (And we know that matters!)

Did you know that there is a photo gallery at the bottom of every recipe post? If you make a recipe from here, you can upload your own photo to the gallery on that recipe! You can also do that with your own recipe–if you submit a recipe without a photo, you can add the photo the next time you make the recipe by uploading it to the gallery on your recipe. How fun is that? Multiple photos can be uploaded to each recipe’s gallery. I think it will be fun to see everyone’s photos of how their recipes turned out!

Have you checked out the Recipe Requests section yet? You know how in magazines they have that page where people write in asking for a recipe? But then you never remember from one month to the next what was in there and it’s hard to follow the requests and the answers. This is so much better! You can browse requests AND read the answers all together! You might even have the answer someone is looking for! If you have a recipe that’s been requested, reply to their request to let them know then go to Submit Recipes and add it. (It’s better if you provide the recipe by posting it in the recipe section rather than giving them the recipe in the reply box on the request because by posting it, it’s categorized so others can find it, too.) Maybe you’re looking for a recipe yourself–you can request it! What I love about Farm Bell Recipes is that it’s not all about me here. Whew. Cuz there’s enough of me over here. Farm Bell Recipes is about you and community and sharing. I’m so, so excited about it (and I hope you are, too).

Now for today’s cute and handy kitchen gadget giveaway–it’s this pastry scraper that can be used not only to scrape and split pastry or bread dough when you’re working with it but also for crushing, chopping, and even measuring cookie dough to make even cookie slices. Thank you to all of you who have been posting recipes! My Farm Bell recipe box overfloweth! To mention just a few, I can’t wait to try this chocolate cake the next time Weston’s vegan girlfriend is here, and I’m longing for this apple custard pie. But for now, I’m making this crock pot tamale recipe. Because the oven repairman–that Maytag is paying for!!–came yesterday. AND BROUGHT THE WRONG PART.

I can’t describe the disappointment. My loaf pans cried. Or maybe that was just me.

Okay, forget that, don’t worry about me! I’LL BE FINE. (Maybe. At least I can have these avalanche bars.)
